"Error Creating Firebase Project; an unknown error occured while creating your project" is the error I get attempting to let Flutterflow create my Firebase Project. Do you know what I could try differently?

You have to go to flutter flow and accept the Terms Of Service by creating a project. You can then delete that project and let Flutter Flow create a project for you.
