Recently I visited Trinidad for just a few days. My niece Kashi and a neighbor (uncle Bato) made this delicious curry duck for me with a makeshift fire in the backyard. It was an absolutely enjoyable experience and I wanted to share it with you. The flavors of the duck was one of the best I've ever had --all because of the wood smoke that added another layer of flavor!

Good morning sis Ria, thank you for sharing. It's a tradition in Grenada, Carriacou and Petit Martinique whenever you go back they call it saraka food as a celebration. This being back Good memories and yes smoke food has a unique taste; sweetness. Glad you had a mini break, can't wait God's willing to see my folks and visit my second home Trinidad. The older guy and you toil ,season, cut up,wash up the duck..struggle to light up the fire with dry branches and twigs and poucknee...and the red shirt just come like that and pick up the whole pot ah finished curry duck and walk away as if he cook it...wha the rass...lmao hahaha omg He got belly...
