Hey JP. I don’t know if anyone else mentioned it but to get a much more moist turkey, brine that bird for 24 hours in a solution of 1 cup of kosher salt, 1 cup of brown sugar to one gallon of water. It makes a big difference. You can add herbs if you like.

@@bashcoder thanks for your comment. I was informed by the folks who will be doing the actual delivery a couple of hours ago. They believe they should be able to deliver Thursday or Friday. Their just waiting for it to get into Portland Or. by rail. I talked to Criss at Lonestargrillz today to inform him of how disappointing this entire experience has been and could have been avoided with better communication on their part. I told him I'll call a couple of weeks after I get the smoker when I'm not as upset as I currently am. Anyway, at this point I expect to be disappointed at the end of the week by it not being delivered again. But if they do get it here by Friday at least I'll be able to do first burn ,season and maybe do my first cook. Fingers crossed 🤞🔥🍻

Heavy duty poultry shears work so much better. I was just waiting for a finger to go missing while you were cutting out that backbone. Whatever works I guess.

I have found that if you stand that bird up you can cut strait down both sides of the backbone. And the bird doesn’t move all over the place. Sharpen the knife between both sides and it will cut like butter. Love the videos.

Nice video… hey do you get the charcoal taste in your food?… I’m thinking about purchasing one so just need an honest answer please . I know you can over smoke meats but outside of that your true thoughts would be appreciated. Thanks

Thanks for watching and appreciate the question. Reminds of a time I was starting to learn to smoke meats. I had gotten a new Weber Smokey Mountain and was smoking a Pork Butt. Seasoned my meat and was anticipating a great flavor out of it. However I put the protein into the smoker before reaching the appropriate temp and all that initial smoke from the charcoal got into the meat and man was it nasty. Charcoal infused meat is nasty. As long as you put the protein into the smoker once it has reached your temp, you should not get any charcoal taste out of it and it should be good. Thanks again for watching.

I should be receiving my LSG within the next week or so. Question, if you don't mind me asking. Did you get the grill cover from them? If not, how do you cover your grill in the winter wind and rain months?

Congrats on your new smoker. Your gonna have a lot of fun with it. I did not get the cover and regret it. I normally keep my smokers under the canopy so they are out of the weather elements. But I should of got them. Maybe I will reach out and order them. Thanks again for watching and commenting.

JP, great looking bird. Just something to think about. I prefer to grill or smoke all my poultry skin side down most or all the cook. Reason is it helps to make the meat more moist. It does this by retaining more of the fats as it's rendering. For a crispy skin, flip pieces over towards the end so fats can run out, allowing the skin to finally crisp up. And of course have a tray under the meat so as to make clean up easier like you did but even more importantly to use the drippings to make a kick ass gravy. Hmmm. At this point if I get my IVS this upcoming week ( week 26 ) I think I'll go buy a lottery ticket. Have a great day. 🦃🔥

Thanks Cory. I just got reminded by hector to add wood chunks. Completely slipped my mind, I guess i was just to excited. There was about half of the B and B charcoal still left. I will be doing a brisket next and for sure gonna add the chunks. Thanks again.

Hi JP - Nice cook 👍🏾. The color of that Turkey looked like it came out of the oven. What wood did you use? I realize it’s not a comparable smoker. I use apple wood on the WSM & it’s good but the skin comes out slightly darker than I would like. Any tips would be appreciated. Thanks for sharing. Be well & safe. Thanks Mark, appreciate you watching and commenting. I did not use any wood, I used B and B oak charcoal. I think what happens in the WSM is that the meat is a little closer to the heat. Causing the darker color. What I would do is keep an eye on the color and once it reaches the color desired, wrap it in aluminum or place in a tray and cover. Thanks again. Be safe too.

Could've sworn I heard someone laugh when you said "sometimes you just gotta play with it a little bit." Maybe consider some sharp shears. Definitely not over kill though. You didn't even use 10 lbs of charcoal. Is there a negative with tossing in some small chunks of wood relating to temperature duration?
