People have mentioned Nigel Saunders when talking excessive root pruning. It’s a risk but could work if there’s little tree mass above ground I’ll be amazed if this survives. Far too much root pruning but good luck !
I'm actually jealous that you live in a area that still has a "ice cream man" truck that comes around. In the US there are almost no ice cream trucks left. Not that I live in a city where you would find one.

So the olive has'nt growin so well in the last couple years , I no lets cut all the roots off , good old nigel saunders aye ! I spose if any tree can handle it , it would be the olea , have you checked out the Aussie bonsai bloke he's got some mean olives and good luck with this tree keep us posted 👍

@Toulamaples so far, I've only lost one tree repotting, a pine done mid summer last year which in hindsight was a very poor job with many errors, but I have pushed my luck with some this spring! Fingers crossed this one enjoys the new soil
i wouldve stopped at like 12:45.. just trim the stuff at the bottom going down & leave everything else. if this thing lives it'll spend the next 2-3 years recovering the roots it lost. keeping 30-60 percent of the root mass is pretty standard when repotting. you kept about 5 percent. that's why it can takes years to reduce the root mass in to a bonsai pot.
