The best caldereta in the Philippines is goat caldereta. Beef is okay but in many special occasions we cook goat instead.

I think that is one of the Filipino food that will for sure foreigners might like. Specially when cooked in home with lots of bell peppers, carrots and potato with the choice of beef parts. Originally goat meat is used in caldereta so lamb would be a good alternative and maybe other game like dear and rabbit.

Fun fact with how Filipinos, in general, eat using utensils: We do not use knives to cut meat on the plate. The fork holds the meat and we use the spoon is used to separate the piece we want. The spoon is used to get the rice or soup as well which is totally different how most foreigners do it where the fork is used to get the rice from the plate

Caldereta (or Kaldereta, as an alternative spelling since the Filipino alphabet technically does not have the letter ‘C’ in it) can be comfort food, depending on the individual or family. Recipes and tastes differ depending on what you grew up on. Like in my family, my mom would add a bit of tabasco during the cooking process to give it extra heat (but not TOO much), while the typical caldereta you would find in restaurants would not have the spicy heat as not everyone likes it. Thank you for your reactions! You guys are fun to watch as you explore foods that you aren’t as familiar with.

My nana used to make caldereta with ground peanuts (the snack type peanuts like Planters Mr. Peanut) and a small can of liver spread (like Underwood liverwurst). Brings the flavour to a different level.

I suggest you try Squid Adobo (also called "Adobong Pusit") next time, another classic Filipino adobo dish. It is fresh squids stewed adobo style in the squids' black ink. It's very delicious, you will love it. Pair it with plain boiled white rice (not fried rice or flavoured rice such as garlic rice). I am glad that you loved our native beef kaldereta, or beef casserole. Greetings to you there in Canada, from here in Manila, The Philippines. 🇵🇭✝️🇨🇦

We have so many Kaldereta variants. In the provinces it is usually more spicy and not just a hint of spiciness. Then there is the special variant with liver spread incorporated in the sauce. There are so many variants because some drinking groups compete with cooking like they compete with karaoke. Some use Alagaw leaves as an added vegetable. Some add ground up cooked Kadios in the sauce. You have to get the cooks drunk before the secrets spill out.

$20 for caldereta for 3-4 servings? that's 1,000pesos. I can buy here, 4- 9 servings of caldereta (small plate (platito)) and rice, depending if it's a turo turo eatery or a good resto. Philippine restos in major cities/tourist areas are getting at par with US prices. Or, I'll cooked a homemade caldereta using 1 kg beef plus ingredients for 1,000pesos maybe good for 8 - 10 servings. caldereta is really a spanish stew and only served in special occasions because beef and ingredient prices is expensive about $10+ per kg.
