This specific Hassan is cursed arm Hassan, due to his eponymous noble phantasm, which is a demon's arm implanted onto his shoulder to use its ability as his own. There's also one in Fate/Zero, Hundred-faced Hassan/ Hassan of the hundred personas, whose split personalities are sublimated as their noble phantasm by manifesting as an army. They're all members of the hashshashin, and arguably, their most badass member, the original Hassan-I Sabbah (old man of the mountain) appears in the Fate/Grand Order Babylonia anime, and has a cameo in the Fate/Grand Order Camelot anime. To explain the difference between UBW and HF in the simplest terms: It's like playing through a game multiple times and selecting different story choices to get a different ending. Fate/ Stay Night was a visual novel with three routes. The Fate route, UBW route, and HF. In the game, you would make different choices to get each of the three endings. The movie trilogy is adapting the Heaven's Feel route, which has its own different story beats and ending from UBW.

Skull Mask guy is the True Assassin, Hassan-I Sabbah, Kojiro, the Assassin Medea summoned was noted not to be a legitimately summoned Servant due to her hijacking the summoning for the Assassin slot. In Heaven's Feel, Zouken, Sakura and Shit-ji's grandfather summoned him due to deeming intervention valid in this route, where's he remained hidden and never appears on the other routes. The Fuyuki Grail Wars are actually set so only those of the Hassan-I Sabbah can be summoned into the Assassin Class for the Grail Wars in it. To clarify, Hassan-I Sabbah is, as far as Fate lore at least, the title used by an order of Assassin for its leaders, there are multiple Hassan-I Sabbah's that can be summoned as Assassin for the Fuyuki Grail War. The one in this War specifically is Hassan of the Cursed Arm, which as should be easy to tell is due to his NP he used on Cu, basically he touches a person's chest in the area of the heart with demon arm and he can pretty much crush their hearts via a curse of sorts, lethal bit requires him to touch them first. Assasin's, at least as far as the original FSN goes, generally are poor at frontal confrontations against other Servants, he was able to kill Caster easily since she was surprised by him and Caster is not very physically able either, but otherwise would normally get trounced by the likes of Lancer and Saber head on. The only reason he won was because he had help from the Shadow (something that will be explained in the next Heaven's Feel) but as seen with Rider, without its support he's easily bested by more combat capable Servants. Heaven's Feel is a movie trilogy so you've got two more to go with this story route.

Hassan of the Cursed arm's Zabaniya creates an image of his enemy's heart after he touches their chest , this image is directly linked to the actual heart as u see in this. To briefly describe what Hassans are - Hassan-i-Sabbah was the title taken by the grandmasters of the Order of Assassins/ Hashashins (if u know Assassin's creed. this is the group those games are inspired from). There were 19 grandmasters according to fate lore, they all wear black, hide their faces with a white mask and all of them have a Zabaniya technique which are all different from each other, in fact, one needed to create their own unique Zabaniya to become the grandmaster. Also, the word "Assassin" comes from "Hashashin", therefore the word "Assassin" itself acts as the catalyst for summoning Hassans. You should read the VN at some point whether on channel or personally, there are a good amount of things that are never mentioned in animes, also for the Saber route.
