Most of my family and friends used to question why I was always SO particular when I was serving fish. Particular about every aspect. Resting time for the meat in a cool place, type of cuts, time from stove to plate all the things that you are demonstrating. So after many years, I get requests to prepare things. “We haven’t had a nice Xyz fish diner in a long time can you..” When I watch you prepare something, I really like that you’re helping people enjoy fish as much as Myself, family and friends enjoy fish! In the video you just showed I could tell by the way the knife was working that the FIRMNESS OF THE MEAT WAS 100%. Perfect !

Aaron you and your wife are a true inspiration. I am from Valdosta GA. I grew up in the Gulf a lot spearfishing. I live in ND working in the oilfield. We get to come dive 2 or 3 times a year. My ultimate dream in life is to do what you're doing commercial spearfishing and dive charters. You're are my true motivation to chase my dream. Thanks man.
Valdosta boy here too! Grew up fishing the gulf, carrabelle, keaton beach, PCB, destin etc and recently have dabbled in some spearfishing. Watching these videos and working on my 21 Cape Horn to get through these winter blues. Can’t wait for the summer chasing pelagics in the gulf!

I agree wahoo is really good!! We did it with mayo and salt pepper pureed garlic onion. Slathered it and wrapped in tinfoil and baked at 375 for 20-25 minutes. Moist juicy just like mahi mahi or halibut

My son and I do all of our offshore drift spearing from our J16. We keep the anchor line out as a visual for where the boat is, and the anchor on the bow and ready to drop when the chaos begins or we spot a good ledge or coral head to explore. Solid strat that has been our go to for the past couple years. In fact, we were out there on the same day as you guys, but in Marathon.
I was so happy Madeline shot one until it pulled off 😢. We steak ours and throw them on the grill with butter and garlic. Always a hit at our fish parties. Loved the video!! ❤

Fishing years ago off Key West. Fishing guide did a great job. We had a nice Wahoo and tuna we brought back to the Hyatt to be prepared. I was really dissapointed with the Wahoo. After watching this video its obvious it was over cooked. Excited to give it another try. Glad I found this channel great job Thx.

Fun! Taking gheenoe offshore, you did it perfectly. With the key west super calm rare occasions I taken my 14 foot alumacraft with 20hp yamaha off shore to reef by sand key to fish so just gotta know what to do and send it when it's good! Makes it more exciting to know it's done in the skiff rather then a normal off shore boat.
Awesome video as always! Great job determining the weather for the trip. Great job getting a wahoo in the gheenoo! I've never seen a gheenoo out so far from shore. Yes I saw the other vessels and I was aware that you were being looked after by friends. Still out there in a freaking gheenoo and putting the smack down on the wahoo 👍👍. This takes some serious skills. Awesome job with the description of how to process the fish and the cook was perfect. I wish I had more hands to give more thumbs up on an epic adventure.
you know how to cook fish! it's the single reason that people have "bad experiences" with cooked fish...it's not cooked correctly... that looks delicious!
