Fish and chips, with Guinness batter
In this recipe I'm using Pollock, called Lieu Noir in France, its a great alternative to cod, a similar taste and texture but a darker flesh, but more important its more sustainable than cod and costs half the price, I urge everyone to consider changing to Pollock to allow cod to recover. I did say use a tablespoon of bicarb, this should be TEASPOON, take the peas of the heat before adding as they will foam up.
