+Jesset Hollywood I heard from a friend in FL that they tend to have a lot of parasites. But properly cleaned like here i cant see why else not to eat them.
when they are gutted and de-gilled they bleed out. the gills are like lungs, constant blood flow. Many people do this as soon as the fish are caught, as its thought to remove some of the fishier flavors associated w/ oxidation of the blood.
