Fish Head With Bean Paste Recipe

Today's recipe is steamed fish head with bean paste. Fermented soybean paste is different from fermented BLACK bean paste. Fermented black bean paste has a stronger and bolder flavour. However, you can substitute fermented soybean paste for fermented black bean paste in this recipe.
Ingredients:
1 fish head, any type of white fish
1 Tbsp Chinese cooking wine
1 chilli peppers (fresh)
10 cloves garlic
3 shallot
5 slices ginger
2 Tbsp fermented soybean paste (豆酱, taucu)
1 Tbsp whole fermented soybeans (optional)
2 Tbsp soy sauce
1 Tbsp oyster sauce
1 tsp sugar
3-4 Tbsp oil

If fish head is not your thing, try using any type of white fish fillet or even a whole fish. They work just as well.
