Bitter Melon and Egg Stir-fry (苦瓜炒鸡蛋)
227g / 8 oz bitter melon
1/2 tsp salt
2.5 Tbsp oil to cook the bitter melon
5 cloves garlic, minced
2 tsps soy sauce (Amazon Link - geni.us/light-soy-sauce)
1/4 tsp white pepper (Amazon Link - geni.us/white-peppercorns)
3 medium size eggs
Stir-fry Beef with Bitter Melon and Zha Cai (苦瓜榨菜炒牛肉丝)
227g / 8 oz beef, julienned
1/4 tsp salt
1/2 Tbsp soy sauce (Amazon Link - geni.us/light-soy-sauce)
1/2 tsp dark soy sauce (Amazon Link - geni.us/dark-soy-sauce)
1/4 tsp ground white pepper (Amazon Link - geni.us/white-peppercorns)
1/4 tsp baking soda
1 tbsp Chinese cooking wine (Amazon Link - geni.us/Shao-xing-ooking-wine)
1 tbsp cooking oil to coat the beef
227g / 8 oz bitter melon
1 tbsp of cooking oil to blanch the bitter melon
2 tbsp cooking oil to stir fry
3 cloves of garlic
1 red chili pepper, julienned
3 oz of zha cai, julienned (Amazon Link - geni.us/zha-cai)
2 Tbsps of cooking oil to stir fry
1 scallion, cut into stalks
Stuffed Bitter Melon with Ground Pork (苦瓜酿肉)
150g / ⅓ pound pork
1/4 tsp salt
1/4 tsp ground white pepper (Amazon Link - geni.us/white-peppercorns)
2 tsps Chinese cooking wine (Amazon Link - geni.us/Shao-xing-ooking-wine)
2 tsps minced garlic
1/4 cup diced scallion
227g / 8 oz bitter melon
2 Tbsps cornstarch to coat the bitter melon
1.5 tsps soy sauce (Amazon Link - geni.us/light-soy-sauce)
1.5 tsps oyster sauce (Amazon Link - geni.us/premium-oyster-sauce)
1/2 tsp dark soy sauce (Amazon Link - geni.us/dark-soy-sauce)

1/4 cup water
2.5 Tbsps oil to pan-fry
Bitter Melon Salad (凉拌苦瓜)
227g / 1 bitter melon
1.5 tbsp of oil to blanch the bitter melon
3 Tbsps diced cilantro
3 Tbsps diced scallion
1/2 Tbsp minced garlic
1/2 Tbsp minced thai bird eye chilies
1 Tbsp soy sauce (Amazon Link - geni.us/light-soy-sauce)
1/2 tbsp of fish sauce (Amazon Link - geni.us/fish-sauce)
1/2 Tbsp Chinese black vinegar (Amazon Link - geni.us/chinese-black-vinegar)
1.5 Tbsps of hot chili oil
1/2 Tbsp toasted sesame seeds (Amazon Link - geni.us/white-sesame-seeds-w)
Bitter Melon Chicken Soup (苦瓜鸡汤)
227g / 1 chicken breast
1 Tbsp minced garlic
1 tsp minced ginger

1 tbsp cornstarch

I’m a Filipina and we call it AMPALAYA. Some cooked the way you did, squeezing or removed the juice with the salt but not for me because I didn’t want to throw the nutrients (from the juice). Tho’ we cooked in same way. Gardening is my favorite hobby and planting this Bitter Melon/Gourd is abundant in my backyard garden tru the bamboo stick trellis during Summer Season in Chicago, USA 🇺🇸 Thank you also for sharing.

My Filipino ampalaya recipe for a salad: Slice the ampalaya, add sliced onion, chopped tomato, bits of fresh ginger, vinegar, pepper. Perfect with fried fish or as topping for a handful of baby spinach.

THANK YOU, Mandy! I only knew of 2 of these recipes, so you've helped expand our menu! I've been experimenting with using Bitter Melon instead of Opo (and vice versa) - and found that Opo and Bitter Melon make a nice stir fry. ANYHOW - can't wait to try these new dishes (especially the beef with preserved radish mmmmmmm). You're awesome, Mandy! Thank you!

Omg I LOVE bitter melon, and all of these dishes look SO good! Thank you very much for sharing! Btw, I grew them a few years ago (live in Wisconsin, USA), three varieties... and I had SO many... both refrigerator drawers filled... I wish I had these recipes back then, but ended up dehydrating most of them. Very easy to grow.

Beautiful recipes. I was from the Philippines. We do call it bitter melon and generally cook it like you did with eggs but we add shrimp too. Haven’t had it in years but now a good reminder. Delicious!

I am viewing from the twin island Republic of Trinidad and Tobago...we call this vegetable "caraille"..Usually eaten fried in local East Indian dishes but I love it stir- fried with beef chinese-style😊❤

Its called "Karella" in northern India. Plural is "Karelle". So the Trini name "Caraille" is just a carry over from the Indian name I guess.

I bet the bitter melon could work well (especially after the soak & squeeze) not just curried or stir-fried (otherwise known by such names as poriyal or thoran among other names), but also in a litany of other dishes such as in biryani/kongfan form, in samosas & dumplings, dal, sambars, chutneys, pickles, & a classic northeast Indian dish of pork with bamboo shoots, to name a few. In fact, I suspect that it would go just as well cooked with hing/asafoetida and/or mushrooms as with allium stuff especially in veg form, but also in non-veg cooking

@@tktyga77 its often cooked with raw mango powder to give it a bit of a bitter tang. And yes it is often picked along side lotus stem, raw mangos etc.

We call it a Ampalaya in the Philippines, has many good health benefits and one reason why I started eating it. I cook it with egg, ground pork and tomatoes together. Sometimes, I add to stir fry shrimp. We also add it to mung beans soup and Pinakbet, a vegetable dish with Squash, eggplant, green beans and stir fried with pork and shrimp.( very popular dish in the Philippines).

11:07 You can also add vinegar or a citrus juice to the water to further reduce the bitterness. Italians do this a lot with large eggplant or bitter greens before sauteing.

I've always loved bittermelon growing up. The more bitter, the better. In Ilocano we call it parya, & in Tagalog ampalaya. We also eat the tender leaves with the gourd in tinola (chicken in clear broth), mung bean stew, & pinakbet just to name a few. The blanched leaves are seasoned with fish sauce & added to tomatoes as a side dish.

My favorite vegetable! In Japan it's "Goya", and my favorite dish is Goya Champloo/Chanpuru from Okinawa! It goes sooooo well with eggs, very similar to the first recipe but adding in tofu, pork and bonito flakes.

To remove the bitterness, use lime or lemon juice. My neighbour uses tamarind juice. Both work better than salt.

bitter melon .... Foo Quah in Cantonesee......normally i stir fry it with beef and the black bean (tow ssee) .... and also in Malaysia here, we have something called Yeong Tow Foo - a Hakka dish.. that stuffs some fish paste into the bitter gourd and lightly fry them ,,,,

We call it Caraillie (pronounced car-Isle-Ee). Also known as bitter melon. We slice it thinly, sprinkle with salt and let it rest for about 15 minutes, then squeeze out the liquid and fry with a little oil, onion and crushed garlic. Delicious! A good side dish and said to be for treating cancer.

Bitter melon is called “amargoso” on Guam and the southern Philippines. Aside from being used to make delicious dishes, it is also used to induce vomiting due to its highly bitter taste.

Thank you for sharing these 5 scrumptious recipes using Bitter Melon or as they call it in my country: Calabaza China Bangaña, translates into: Bangaña Chinese Squash. We called it bitter gourd. I used to mix it with salt like what you have done but not anymore. I just cut it in half cm slices and cook fresh shrimps or dried shrimps with garlic. It taste less bitter without rubbing with salt and actually there is a taste of sweetness too! Sometimes I put egg like yours but most of the time without. 😍

In my country , Reunion Island (a French island in the Indian Ocean, located between Madagascar and Mauritius), we call it Margoze amer . They are smaller than the ones in the video but they are really bitter. I will definitely try your recipes !🥰🤪

Hi Mandy!!! I got one of those WOKs for a gift. I seasoned it and it is still sticking. Do you season yours evertime you use it??? I dont like that. Thats just what you do with a Iron Skillet...Please let me know how I should use this WOK. I see where you said to put oil in and swirl it around the WOK when its hot... Thank You...🦋
