My mother made the best fried okra. I live in the USA and she would cut it into small slices and fry in a batter of cornmeal and egg beaten together. It was always eaten by all 4 of us until our baby sister came along. I have 3 sisters and 1 brother.

Thank you , so much. Whenever I look for okra recipes all I can usually find are gumbo recipes. That "sliminess' in okra makes it an excellent thickener in soups, stews, and casseroles; but, these recipes of yours open up new possibilities.

When I was a kid, the only dish I had had okra in was classic Southern gumbo, and I hated it because the okra was slimy. It wasn't until I got older that I realized okra didn't have to be slimy at all. Thanks for giving me even more ways to eat this vegetable!

Great okra series! I loved okra as a child. My family made it boiled and welcomed the slimy texture. We fried it too, but not like you've done here. I like the idea of halving them! I look forward to trying the fried and blanched recipes! Thank you, Chef!

I often see fresh okra in Chinese grocery stores. I am German and an immigrant to the US. I became familiar with the use of okra in southern-style gumbo stew, but have been wondering how Chinese use in cooking. Thanks for enlightening me. Fried okra (common in the American south) is a favorite from my childhood. I'm happy to learn some new okra recipes! I like how you explain how to prepare the okra and also about the sliminess and how it will disappear according to various cooking methods. I suspect most don't like okra for this reason, but slimy okra means it's not cooked well. I love okra in Indian food but have not had the pleasure of trying it in Chinese food. Thanks for sharing these recipes and cooking methods!

I love almost every edible vegetable, even the “weird” ones like Jerusalem artichokes and kohlrabi, but I hate okra, parsnips, and curly kale. I’ve tried many times with many recipes, but I still hate those three. I might try the fried okra recipe just out of curiosity, but I’m not super optimistic.
