Preserving your sugar water is one of the most critical components of your Shaved Ice or Snow Cone Flavors. There are people who choose not to preserve their flavors because it will be considered a more healthy option. This is perfectly fine to do, as long as you are equipped to do so. For instance, you will either need to have a refrigeration unit that will be able to accommodate all of your flavors and sugar water, or you can even dispose of your flavor once it has become a few days old.
However, if you are not opposed to preserving your sugar water, then we have an incredible solution for you as long as it is implemented correctly. We have very clear instructions on the side of our preserving kit. As Callie mentions in the video, we have two options. One is a liquid option that takes less time to dissolve in your product, but it will cost more in shipping due to its liquid weight. Or we have a powder option that is a bargain both in price as well as shipping, but it will take more time to dissolve in your sugar water solution. I say this like it is a concern, but it really isn't. It really comes down to your preference and that is why we offer both.
The instructions on the pack are the following:
For the Liquid Version:
Fill a 5 Gallon jug with 1 Gallon of water
Add 2 ounces of Preservative
Add 25 Lbs of Sugar
Fill jug with water to the 5 Gallon mark
Add 1 ounce of Citric Acid
Mix Until Dissolved
Flavor with Snowie Brand Original or Natural Concentrate Shaved Ice or Snow Cone Flavors
For the Powder Version:
Fill a 5 Gallon jug with 1 Gallon of water
Add 1 scoop* (1 oz) of Preservative
Add 25 Lbs of granulated sugar
Fill jug with water to the 5 gallon mark
Add 1 scoop* (1 oz) scoop of Citric Acid
Mix until dissolved
Flavor with Snowie Brand Original or Natural Concentrate Shaved Ice or Snow Cone Flavors
The biggest reason we decided to do a Flavor Friday episode on this subject is because this is one of the most common mistakes done by our customers, especially when they are new to the business. The number one thing you need to pay attention to when going through these instructions is how the Preservative is one of the first products in the jug and Citric Acid is one of the last. You never want to put these products in at the same time. As Callie illustrates in the video, the Citric Acid is not put into the sugar water to create more of a twang in your flavor. It is simply to cause a reaction that will kick off the Preservative. However, if you put these products in your sugar water at the same time, they will simply bind to one another creating a solid like substance that we illustrate on the Snowie Shovel. If you notice this kind of substance floating in your sugar water, then you can be assured your sugar water is not well preserved and you will want to use your product in a timely manner and then wash your jug well to make sure it is good and ready for a truly preserved batch.

Citric acid activates only sodium benzoite Or potasium sorbate also? ..and what is ideal ratio of preservative and citric acid for mango ready to drink?

Hello, i make maeshmallows and thought of using potassium sorbate And citric acid so how many grams is one gallon? And in which stage should they be added? Is it safe to heat potassium sorbate and citric acid? Please let me know

We know the proper preservation ratios for our products, but unfortunately do not know that information for other liquids/beverages.

Hello maam may ask if i will make 1Kg gravy sauce how many tablespoon of sodium sorbate do i put in my sauce? Or what is exact ratio? Or it is enough i only use sodium sorbate to preserve gravy sauce? Pls help me maam. Thank you

I'm sorry, we only know the proper ratios for preserving our own products. For preserving other items, it will require further research on your part to ensure it is done so safely. Good luck!

It's possible, but we only know the correct ratios for sugar water. For other beverages/liquids, you'll need to do further research.

What is the ratio if you're using a liquid sodium benzoate and a powdered citric acid? 1:1 or 2:1? If you use too much does it affect taste?

Dawn, sorry for the delay. If you use too much it can affect the taste and can actually give you a little burning sensation in your throat. There are a lot of products out there that use too much that will cause that sensation. The ratio for powder is 1:1 and the liquid is 2:1.

How many teaspoon or tablespoons make up the scoop of the powder and why do you use both citric acid and sodium benzoate???

The scoop is one ounce, so it is two tablespoons. The Citric Acid is actually an activator of the preservative. If you only put in preservative, it will not do anything.

Yes, we make juice and other drinks like Sherley Temples all the time with our flavors. We even have recipes for that on the back of our bottles.
