1 Egg Souffle Pancakes
1 egg, separated
1 T. milk
2 T. cake flour
1/2 t. vegetable oil
1/4 t. baking powder
1/2 t. vanilla extract
a few drops of fresh lemon juice
1 T + 2 t. sugar

yes this is true! i've struggled with a restrictive eating disorder before and her content is so nice. i'd say i'm in recovery now and i've been thinking about trying to bake again because of her.

What is there to be negative about? Generally if something is overwhelming somewhere else it's time to step in and try and change it for the better instead of just avoiding it. Even if you can change one person a day that one person knows many. Don't just avoid that stuff or it'll just get worse. We are all in this life together. And we want a SMART, moralistic, and fun future for not only our kids but our future grandkids. Keep fighting!

you can also add cream of tartar. As it suggests, something acidic seems to help. -

Salt also helps. And if you're going to beat the whites, it's not a good idea to use your hand to separate eggs unless you just really washed your hands well so there are no oils on it.

This recipe is very similar to my mom’s puffy omelette! *happy childhood memory* I loved them filled with strawberry jam. As a side note-my mom accidentally made a Dr. Seuss puffy omelette when she filled it with grape jelly. Chemical reaction between grape jelly and egg turns it green!
