Ingredients:
For the Chocolate Cake:
2 large eggs at room temperature
1/2 cup (100g) Sugar
1/2 cup (120g) Plain yogurt at room temperature
1/3 cup (75g) Vegetable oil (flavorless like canola, corn, or sunflower)
1 tsp (5g) Vanilla
1 cup (120g) Plain flour
1/4 cup (22g) Unsweetened cocoa powder
1 + 1/2 tsp (6g) Baking powder
A pinch of salt
For the Cocoa Syrup (optional):
1/3 cup (80g) Hot water
2 Tbsp Sugar
1 Tbsp Unsweetened cocoa powder
For the Strawberry Mousse Filling:
400g Strawberries, chopped (fresh or frozen)
2 Tbsp (25g) Sugar
1 Tbsp (15g) Freshly squeezed lemon juice
4 Tbsp (60g) Water at room temperature
1 Tbsp (10g) Powdered gelatin, unflavored

3/4 cup (180g) Cream - about 35% milk fat (cold)
For the Chocolate Ganache:
55g (about 1/3 cup) Semi-sweet chocolate (about 50% cocoa solids)
1/3 cup (80g) Cream - about 35% milk fat (bring to room temperature)

Hola buenas noches, vaya pintaza que tiene ese pastel, que rico, oye una duda, si uso fresas congeladas tendría que dejsrkas descongelarlas abtes de echarlas a la sartén o se podrian cocinar directamente congeladas ? Un saludo y gracias por tu tiempo.....

You can use frozen strawberries. I just left them at room temperature for a while to make it easier to cut them into smaller pieces.

Can we substitute the gelatin with powdered agar? If yes what would be the substitution ratio and when to add it?

Sorry, I'm not used to using agar. But I think that with agar, the filling would not be as creamy as it is when using gelatine.

@@BakingCherry That's right. I tried using agar today and the filling turned out very grainy in texture and didn't quite give a nice mouthfeel. But, the cake overall turned out very delicious. Thank you for this recipe❤
