I'm sure most of you will see this picture and think "oh it is one of those tiktok tortilla sandwiches from a couple of years ago"- and you wouldn't be completely wrong...
But this is actually a sandwich made using and Italian "piadina romagnola" flatbread which is a little different. Over here when it is folded this way it is known as a "portafoglio" or "wallet" if you translate that literally - because of the way the ingredients are tucked inside and the way it looks.
The ingredients of this sandwich were crispy salami, Parmesan cheese, cherry tomatoes and rucola, with a generous spread of Dijon mustard and pesto. Simple ingredients in a great combination.
