I just want to say Stefan, your videos are simply put works of art. Your knowledge is excellent and your ability to put together a beautiful video with the layout of foods, wine and cutting equipment better than any I have watched. That is for all subjects not just knives. There are times when I may not have watched one of your videos for quite a while, but when I do I enjoy them as much as the first. A big thank you for your time and effort.
Thanks for sharing! If it weren't for your videos and Ig feed, I'd never learn about these overseas knives. They are so pretty, and watching you prepare cured meat and cheese, just make it al tie together. Fantastic as always!
Wonderful design, I think one of my favorites of all the french knives you have shown. It is rustic yet elegant, stylish but not at the expense of practicality. Oh, and your videos just keep getting better when I would not have considered it possible. Thanks Stefan.
This one has been on my wishlist for awhile now. After on of your previous reviews of a Fontenille Pataud knife I browsed their website and this was one of the knives which caught my attention.
Bonjour Très belle vidéo, comme d'habitude, merci. Je possède 3 FP dont 1 5coqs. Il est magnifique et très campagnard malgré une touche de modernité avec son système de fermeture, et une lame en 14C28N.... Par contre je l'ai reçu avec une lame tordue et c'est peu dire. J'ai pris contact avec eux, envoyé des photos et ensuite retourné le couteau. 2 semaines plus tard on me le renvoi un peu moins tordu, mais en plus plein de jeu dans la lame, je l'ai repris moi même.... Mauvaise expérience aussi avec Laguiole Nature corne de bélier noir et lame en RWL34 où la lame est très épaisse au niveau du tranchant et le fil roule à chaque utilisation (mauvais traitement thermique ). La qualité n'est pas au rendez-vous, ils ont des idées, du savoir faire, mais le travail est bâclé
As I become more mature, I find that I appreciate traditional and modern-traditional knives more. This knife in particular is kind of an odd-duck to me...but I kinda like it.
it's always a pleasure to rediscover knives that I already know but through your eyes, I love them even more than before! And I think we share the same taste for cheese, le Comté, le Morbier and la Tomme are my 3 favorites too ;-)
Great observation on the Spyderco Sage series. It is commonly said that the series is named because it uses various locking mechanisms from great innovators or "sages" of knife making. That may be one layer of meaning but I had not made the connection to the Sage leaf which may be the main source of the name due to the leaf shaped blade they all share.
Another outstanding production, Stefan! I've often wondered if there was a connection between the 5 Coqs and the Yssingeaux, due to their similar design. The extra details on the 5 Coqs make it stand out from the flock, just like a Cockerel!

Terrific knife and a great review. Your music transitions are seamless and sound selections are well made. Oh, and while my wife loves your work as well, she does not like what it's doing to my collecting habit.
Excellent video, Stefan. You really brought the past all the way up to the present including the Spyderco. I feel like we've been separated somewhere in life but you've developed superior video production skills. I have the original Yssingeaux knife and several of the ones you displayed, thanks in part to you. The La Rochere cup was a nice touch too. All more reasons I want to come to Europe...
@@StefanSchmalhaus It is indeed. I really started to appreciate French knives with the Opinel, of course, but soon found Le Thiers par Chambriard which we can get fairly easy here in the States. I still have a special place in my heart for those knives but especially appreciate any knife made by Fontenille Pataud. Even a simple knife like the Yssingeaux is beautiful.
Thank you for sharing yet another wonderful French knife! Fontenille Pataud certainly is an exquisite artisan of French cutlery. I have found that even the more reasonable cutlers, like Au Sabot (which I was introduced to by you :)), create a fine product as well. Thanks again for your excellent video and production!
Do you know anything about Au Nain knife-making company? I was looking for a Yssingeaux for a reasonable price that can be shipped overseas. I am aware of Au Sabot and Fontinelle Pataud, but saw Au Nain and was unable to find good info.
I watch your videos, dream about knives, check prices & delivery, and get psychologically prepared to spend a bunch of money on a piece of usable art. Then for some reason, I'm hungry for bread, cheese and red wine. My wife says that I'm easily manipulated... thank-you... (for the knife videos...the food thing, I'll work that out!).
Hallo ich habe mir im Frankreichurlaub ein Laguiol für glaub ich ein bisschen mehr als 30-40€ gekauft.Beschriftet ist es mir Laguiol Rosignol was ja eine seriöse Schmiede ist.Das Holz ist Staminaholz (geschichtet und mit Kunstharz verbunden) und da wollte ich fragen ob es sich bei diesem extrem niedrigen Preis sichtrotzdem um Handarbeit handelt. PassionFrance hat ein paar Hintergrundinfos zur Manufaktur Rossignol: passionfrance.de/main/produkte/-/familien-formen-hersteller/-/-/rossignol/ Bei diesem Preis werden die Rückenfeder und Biene mit Sicherheit nicht von Hand bearbeitet sein. Für die preiswerten Laguiole-Messer werden maschinell vorgefertigte Komponenten verwendet. Montage und Klingenabzug sind dann noch Handarbeit.
Great review. Do you own a Corsican? If so can you review. Lastly have you ever heard F.P. custom add a pocket clip? I know it may be viewed as sacrilegious by purists, but I would love to be able to clip one of those beauties to my jeans pocket. Thanks for your work.
I'm not sure what you mean by "Corsican". I reviewed Fontenille Pataud's Rondinara, a knife that is closely linked to Corsica. As for the pocket clip, what kind of pervert are you? 😜😂

In terms of pocket clip.... modern traditional pocket knives are gaining steam. Absolutely, to the purists this is a perversion, however, an option of a pocket clip would be good for both the company and the consumer. In my humble opinion.
@@hromivuk4086, thanks for your suggestions! To be honest, the Joker knives in the 20 to 50 EUR range (Zamak, Bandolera) look like cheap tourist ware to me. I own an inexpensive Joker knife, and the build quality is horrible. The NF12 might be another story.
Lovely video, but the irony of asking to keep things family friendly while pouring a bucket of alcohol is not lost on me. I think colourful language is a good deal less harmful for the average kid.
