Freeze-dried bananas make a delicious snack but they also reconstitute to almost their original taste and texture for baking. I'm amazed that these bananas can be shelf-stable for over 20 years. YUM!

Ben's Banana Muffins
1/3 cup melted coconut oil
1/2 cup honey
2 eggs
1 cup reconstituted bananas
1/4 cup almond milk
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 3/4 cups whole wheat flour
1/3 cup rolled oats (plus more for the top)
Combine oil and honey. Add eggs and mix. Beat in mashed bananas and milk. Then add all remaining ingredients. Pour into lined muffin pans and sprinkle with rolled oats. Bake at 325 degrees for 22 to 25 minutes. I like to add chocolate chips.

What would I do with a bunch of bananas? Very timely question as I have a bunch of them right now that are almost too ripe. I think I'm going to slice one or two up and try dehydrating them in my air fryer (which has a setting for dehydrate). Otherwise I'll probably take them in groups of two and mash them and stash them in the freezer. I always have the best intentions to eat the bananas, but they always seem to get ripe too quickly.

Banana peel in water leaches potassium which makes a great water for potato plants.

Anyone have success rehydrating sliced banana? I gave my mom a jar of them and she is sick with Covid and wanted to use them in her cereal since she cant get out. I put them in milk and gave them a few minutes but they still have the consistency of lucky charm marshmallows. I am amazed that they dont rehydrate better and quicker. I told her to pulverize them and put them in the milk :). FIgured that would work.

The best part of having a freeze dryer is that you can freeze dry stuff that you like to eat. I have a hard time storing bananas because I end up eating them. I could say the same about apples but last fall I got a bushel of honey crisp and had enough of them that I got a little sick of them and I still have a few jars left. I like to use mason jars because I can put them in the dryer and turn on the vacuum pump and make sure I get all the air out. And by the way if I had a box of bananas I would stick them in my freeze dryer. I would however let them get a little riper first.

Just an update to my previous reply, my wife is a teacher and the kitchen manager asked her if she wanted bananas because they were going ripe to quickly they were going to have to throw them out. So she brought home enough for 2 medium trays of puréed banana's and six trays of slices with enough left over purée to make a cake pan full of banana bread. I really need another set of trays.

My variation is to slice the bananas using a SPAM luncheon meat slicer (could use an egg slicer) to get uniform chips. Sprinkle them with sugar and cinnamon, then freeze dry them. I pack them in pint mason jars (portion control) with O2 absorbers. These are treats for the grand kids. They call them Papa’s nanas.

Great video! When bananas get a bit brown, I freeze them in plastic wrap for a frozen treat. Btw, you could have added chocolate chips to the last muffin and you could have enjoyed the muffin more!

Same thing you did!! Just don't have my FD yet. I freeze them for banana bread but not that many!! Mashing them was great idea. Just bought bananas today and they were ,39 a lb. That is the cheapest I have ever seen them. Wonder why? Thanks for sharing

I have a freeze dryer too and that's one of my favorite treats! I didn't think about mashing them up. Strawberries and raspberries are great also!

How many chocolate chips? One cup? My FD items well-vacuumed in jars have been getting soft. I just purchased a batch of silica packets...Great post and thanks for the recipe.

@@TheProvidentPrepper I do use O2 in everything except sugar, of course, but my on-the-counter jarred beauties still go soft. I'll let you know about the silica packets. ETA: 1 1/2 cups??? Maybe you need a magnesium supplement! ;)

A freeze dryer has a 6 month payback. Mine is 2 years old and has paid for itself several times over.

Smart freezedrying the bananas. When you dehydrate them they are like chewing on bone slices. They are little bricks.

Have you tried Lily’s brand chocolate chips? They’re sugar free and taste really good. And actually have pretty clean ingredients!

Love this video! I do have a question, on another video of yours where I left a comment, a belated comment, about a recipe that you asked for. I accidentally pressed “Report”. I believe I “Reported” myself. Ha ha. Anyhow did you see that? I’ll let you know that the recipe you were asking about, American goulash, is much like the recipe in the video by Kent Rollins. I had a bit of a commentary, the things that I did differently in my own recipe. Please let me know if you got it, or I will be happy to rewrite it again. It was in the taco meat video. ❤️ ~~ Sharon

Lily's makes a great sugar free choc chip. They are a little spendy but if you use them for such a muffin as this. I love them

Nice - but you would have had shorter cycle times if you hadn't overloaded the trays. Your slices are too thick and the mashed was also too thick. If you want to do big loads you should have gotten a large dryer. The latest software update is available at Harvest Right.

👍🏻. I wonder if you put the mashed bananas in a ziplock and broke them up further with a meat mallet? Or maybe they are too hard in texture? I utilize my dehydrator and preserve them that way. We aren't big banana consumers but occasionally they are a wonderful treat! We try and utilize the resources we can wild harvest or grow ourselves so bananas don't fit the bill 😊 😂😂. Not a lot of banana trees in Minnesota 🤣 If I found a good deal like you did I'd be buying a bunch as well! I'm enjoying your freeze drying adventures! It has opened a door to much more diverse stores.❤️

What is the temperature set while freeze drying?

Freeze drying works by first freezing the material. Temperatures are taken down below 0 F. Then in a reduced pressure environment, heat is added which allows the frozen water to sublimate, which means it goes from a solid state to gaseous state without going back through the liquid state.
