From personal experience, every restaurant I have ever been that makes “soup of the day” serves it for AT LEAST a week, more typically a month and they will make a batch one to twice a week. If you so happen to be the unlucky fellow to receive a bowl that is on its 3rd or 4th re-heat, I pray you have a strong immune system.

Tbf, he said he liked it back in 2009 and retracted his earlier statement by 2011 when he said what he quoted on MasterChef. A lot of things must've happened between those years for him to change his opinion about truffle oil.
@@bcaye Using up unordered food is fine. The problem is when you refrigerate leftover soup again and again made from leftover food that the soup gets bad.
Soup of the day usually means ingredients that are close to expiration must be made and cooked fresh. Not left overs those usually are for the employees. I've worked several restaurants from low to upper class.....trust me you'd rather cook your own food.
Not all places do. Most places owned by people who are basically just business ppl will keep soup till it's gone, which is gross. If soup is made with any type of leftovers or almost expired stuff, it's gotta go after 2 days max...that what happens with ppl like you who know about food safety & quality. Eew... forgot this, I worked somewhere that used those powdered soups & they'd keep it till it was gone & never stored it correctly.
If I was a rich professional chef with access to the best equipment and fresh ingredients or money to eat at the best places, I wouldn't eat cheap fast food or bland frozen food either TBH. If food is your passion, it's actually quite understandable.

I got a bag of her food for my 2 dogs because the store was out of the usual brand. My dogs will eat aluminum cans and cardboard out of the garbage but they didn’t touch her dog food
I bought Rachel cat food once & my cat became sick after nibbling a few pieces. She wouldn’t eat her usual food, drink water and would be in bed all day. Thank goodness she got better. Do not buy Rachel food ever...

I once worked at a place where we had staff soup of the day, with whatever leftovers we had. And it was always phenomenal. Former staff would complain they couldn't buy it.
I have a friend who went to see a taping of the Rachael Ray show. She informed me that Rachel Ray is definitely not the same person that you see on TV. She said that as soon as the cameras go off, Rachel turns into basically a monster. She’s very demeaning to her staff, and she pretty much ignores the audience during commercial breaks.
I'm a chef myself and in my experience chefs diets are full of frozen pizzas pot noodles and super noodles, if I've been on a 12 hour shift from 11am to 11pm the last thing I'm doing is making anything from scratch 😂
Oh, come on! You can make a fresh pizza on naan, or premade pizza crust, or ciabatta bread, or whatever, with better ingredients, in about 15 minutes plus heating time. I am an average cook, and I can do it in that time even when I make my own pizza sauce! Why eat junk when you can easily eat fresh, without preservatives? And have just the amount of each ingredient that you like?
This is simply not true. Oil, egg yolks, salt and a bit of lemon juice. Use a stick blender and done in a couple of minutes. Add garlic if you're adventurous.

I was a head chef for 10years in a pub and in a nursing home if I made soup of the day it would be sold on that day. We would sell soup of the week in winter normally I would make enough for 2/3 days. Never lie to your customers

2:40 I can actually agree with her. I was studying in UK for 2 years and the amount of takeaways is astonishing. And I had a chance to see many or even too many people just ordering a takeaway because they didn't want to bother with cooking. While from time to time it can be helpful if you're in a hurry and don't have time to cook anything yourself, but straight out only eating like this is something I can't imagine doing myself.
There's a famous Sikh temple in India that serves THOUSANDS of people a day- for free. One of their mainstays is Dal Makhani- literally stewed yellow lentils. Also happens to be a personal favorite any time I eat Indian food. That, some rice, and a hunk of naan- Mmm, mmm, MMM!
Me and my mom make coleslaw by adding mayonnaise, ranch, salt and pepper and onion powder. It’s actually really good!! We don’t make a whole lot when we do make it and we don’t add much mayo and ranch but I make a mean slaw 😊

I have to admit, when I saw the part about the frozen pizza, I kind of got a craving for one of those super thin crust cheap cheap ones that used to sell for 1 or 2 dollars. It's horrible, but sounds yummy right now. It's the only frozen pizza I like. A reminder of the good old poor live alone days.

I worked at a cafe for university of Auckland staff and the chef who ran it made a fresh and different soup every day. He even kept a board that mentioned the soup so customers would know that it's not the same thing they had at some other day of the week.
I would venture to guess that most michelin star chefs aren't going to agree on the hatred of carrots. I can't think of a root vegetable that isn't delicious when prepared correctly...

Oatmeal is one of the worst things a diabetic (like me) could eat for breakfast. A donut would be worse. The carbs would send glucose levels into the stratosphere! Not great for anyone else either.

As long as it's been in the fridge, soup is usually way better the second day anyway. Same as most 'one pot' dishes, curry, chilli, etc! I see no problem, as long as it's been stored properly....In fact, if a restaurant asked would you like todays soup, made an hour ago, or yesterdays soup, made 24 hours ago...Id have yesterdays!
J.P. Balas there’s different levels of quality, the cheapest being synthetic but there are truffle oils that use real truffles that are much higher quality and $$
I find lentils and black eyed peas musty in flavor. I’ve tried them lots of different ways and just can’t get the flavor. But… I love most other beans. Including Lima beans
Incorrect to make the generalisation that everyone keeps frozen pizza in their freezer. It's one of the worst foods to keep there. Better off having some flat bread in the freezer & some grated cheese, sauce etc & quickly make your own pizza. It doesn't have to resemble bought pizzas, just be something you enjoy, yourself.
Yep, if it's out of the sludge bucket, that's pretty disgusting. Although of course if you use today's quality unsold ingredients in tomorrow's soup, that's not a bad thing.

Most people don’t eat this way because they want to. If everyone was rich we’d all want the best foods but people can’t afford it. Allen would definitely eat a frozen pizza if he was broke, just like we’d all eat a fillet mignon if we were rich

I don't think it's snobbery it's maybe a serious preference but mayo from stores is kinda gross. I'm a chef and it isn't so hard to make at home. But it's everyone's personal choice. Truffles are delicious on their own I don't understand why put it in an oil and there is much research it is fake couple times I went to buy it and read the ingredients and I said I'm that's a 👎. Anything imitation is a definite NO 4 me.
Mayonnaise is a very basic, cheap, easy, quick condiment to make. It's also far superior when scratch-,made. It's actually a perfect candidate for DIY'ing when doable. We aren't talking about mozzarella or beer

I grew up on Miracle Whip. Now I make it myself with a stick blender, a mason jar, an egg, a teaspoon of ground raw sugar, salt, a few secret spices, a dash of paprika, and oil. I prefer cold-pressed sunflower seed oil. A little goes a long way. I put red split lentils in my spaghetti sauce, soup, and make burgers from them. Yummy!
I don't have frozen pizza, I just made a pizza tonight, the dough took 15 min, piecing it together, took 5 and cooking took 20, and the I didn't have to babysit it the entire time, only about 5min actual work. It tastes amazing.
If I had the salary of a celebrity chef and had access to/could afford real truffles, then maybe I wouldn't resort to truffle oil. But if you can't afford real ones, know the oil is fake and still enjoy the taste, I don't see the issue.
I've made a frozen pizza one time in my 4 years of university. I cook fresh everyday and if i am ever too tired to cook, I'd rather eat out or order a good pizza.

I'd dispute the soup du jour thing. yeah, sometimes a restaurant may make soup with leftovers, and so what? so long as it's wholesome and good, big deal. depends on your market, your customer. almost every time I made soup in a restaurant it was fresh, but sometimes you have to make ends meet. just watch how much turkey soup Whole Foods Market will sell after Thanksgiving. now where did that come from?
I;m thinking he's looking at it from a food safety perspective. Especially, if they're storing it for any length of time, and reheating the whole thing over and over again. WAY too many can't be bothered to chill it or reheat it properly- or even store it properly- and that's a great way to give someone food poisoning. Plenty of sub-par "garbage in a pot" out there, too. You're charging people money for this! And I presume you WANT them to keep coming back and/or recommending you to others. A GOOD soup of the day is awesome! But there are way too many that are not... Nothing says "I don't give a shit" like a poorly made pot of gack.
As a chef, he should know that freezing foods at home using a slow home freezer messes up the texture of foods and is nowhere near the same as flash freezing which is used in store bought pizzas and preserves the texture of foods

Gautam Sarathy yeah, usually it tastes great and it’s a decent source of protein and there’s no ethical concerns behind them so Bobby Flay should just take the L because he’s being petty, there are good reasons to not eat stuff like allergies or being sick of them but Flay is American and most Americans don’t eat lentils very often
If cilantro/coriander goes in my mouth I have to spit it out. The whole mouthful. It's the only time I would ever do that as I can most of the time chew and bear it.

Gordon dealt with a "soup of the month" on multiple Kitchen Nightmares episodes. One of the owners (Prohibition Grille) didn't even know what "Soup de jour" meant. She thought it was just "The soup that they had" and didn't think it needed to rotate every day.

After we started making our own mayo, we got lazy one time and just decided to buy mayo when we opened it the smell of vinegar and chemicals was too much. We found one that isn't bad but mostly we make our own
So she's okay with baby carrots but not the big ones? As a chef, you would think she would know that baby carrots don't actually exist. They are milled down from full grown carrots like toothpicks from a larger piece of wood.
Have you seriously never either bought or seen baby carrots in a shop? They are most certainly real...though that does not discount the possibility that someone somewhere has done what you claim.
I like huile de truffe but one must use it parcimoniously. Mine contains olive oil and black truffe. And even a little fragment of truffe in the bottom.
