Come with me to find some wild mushrooms. There's an incredible variety! - some toxic and some delicious! Join me in the kitchen to make a great dinner from five kinds of wild mushrooms that I found: the red-belted conk, cat's tongue, conifer orange jelly, western black elfin saddle, and chanterelles.
I found other mushrooms, too. Some of them are toxic, but by looking closely at them and learning each kind of mushroom, one by one, I can keep from confusing them with edible mushrooms. And, every mushroom in interesting in its own way.

I appreciate the insight on the Helvella! I've always read conflicting info on them so have always stayed clear.

Thanks, Hank. I think that conflicting info is because the common names "false morels" and "elfin saddles" cover so many different kinds of mushrooms -- and some of them definitely pose risks for eating. But those mushrooms are from completely different families. I started with boiling Helvellas because it was recommended by the San Francisco Mycological Society, but Seigel and Shwartz' book, Mushrooms of the Redwood Coast (and others), don't have that precaution any more. I haven't seen any information on why the H. maculata is suspect for eating. But it was only recognized as a separate species in the 1970s. I suspect many people have eaten it, thinking it was one of the more common Helvellas. Have a great spring and Happy Foraging!

I take home older mushrooms because I know I can dehydrate them into stock powder. I normally avoid picking mushrooms that fall apart in my hands (mushy), that's my cut off point. They are usually full of bugs anyway.

That's a good question, Ky B. I wasn't worried about it. There's gallons of water in that cookpot for the 5 mushrooms. The compounds of concern for the H. vespertina (and other edible Helvellas) are destroyed by the heat. I haven't seen anything on what compounds are the concern in the H. maculata; I think it's just that nobody has done analysis on them. They were only recognized as a species in the 1970s. I can imagine that people have mistaken it for edible Helvellas over the years. I'll keep track of studies on them over the coming years, though, out of interest. There's a lot of chemistry studies on mushrooms because people are looking for compounds to use in all kinds of industry and pharmaceuticals.
