Welcome to a new episode here in the beautiful city of Manila the Philippines. Throwback to 4 months ago when we first came to the Philippines, the first Filipino dish that we were introduced to is the "best soup in the world", sour soup Sinigang. Sinigang is a Filipino soup or stew characterized by its sour and savoury taste. It is most often associated with tamarind, although it can use other sour fruits and leaves as the souring agent. It is one of the more popular dishes in Filipino cuisine. The soup is usually accompanied by rice. After settling into our apartment, we finally are ready to take on a Sinigang cooking challenge.
We invited our friend Joy who can also speak fluent Russian, she is able to communicate fluently in Russian with Alina which is a bonus, to teach us how to cook traditional Filipino Sinigang. We first met up at BGC Landmark to grab all the ingredients necessary for making the soup then we started cooking Sinigang for 1.5 hours.

Some sinigang recipe would use rice washing instead of water so it is flavorful. After a few days, you can take off the chili pepper from the sinigang as it can be a little bit spicy ( though it depends on how spicy you want it, the longer it is there, the more spicy it is ). For the stir fried string beans, usually they fry a little bit of meat fat first as a base or dried/shrimps and saute it with crushed garlic and chopped onions, with soy sauce or oyster sauce and not salt. Stir fry can also be done as well in Kangkong ( though this should be washed thoroughly and several times so as you can be sure it is rid of dirt and bacteria ) with fried tofu and oyster sauce. Another option in the Sinigang dipping sauce ( we call it sawsawan ) is fish sauce or soy sauce with calamansi and bird eye chilies.

Dont worry about the worm. Just take out the part where the worm is. Its a sign that the vegetable is fresh. They did not put pesticide which is not good for us people to consume. Just dont panic, its all organic :)

That Sinigang Mix is what I really bought in the Philippines going to Europe. hahahaha! For me it doesn't matter how you eat it.. as long as there is rice.. all goood!

You'll be surprised how many kinds of sinigang there are. Miso is added for fish. Others use batwan/batuan, pakwan (watermelon), manggang hilaw (unripe mango), kamias, santol (cotton fruit), calamansi, usbong (young leaves of tamarind) etc as souring/flavoring agent. You can also use pork, chicken, beef, fish, shrimp. Way too many kinds depending where in the Philippines. The most common is what you cooked. Sinigang also uses okra but not everyone likes it. The green finger chili is essential. It adds flavor and aroma to sinigang. Aside from salt, you can use the fish sauce to the sinigang instead. It makes it tastier, with an umami flavor. That's normal for vegetables because they were grown with organic fertilizer and without pesticides. Before and after cutting the vegetable, just wash it in salted water. Remove the part of the vegetable with the worm. Happy eating!😊

Eggplant, which is my fave vegetable, is often referred to as aubergine in other countries. While I frequent Landmark as well in buying my fresh produce, when it is wrapped in plastics, it is quite difficult to see holes in the eggplant were worms enter to eat them. Teacher Joy was right that you can still eat the other parts, just discard the ones with worms. Next menu, ask Teacher Joy about eggplant omelette or Tortang Talong which was adjudged best egg dish in the world. Or, sample it first in Locavore, Manam, or Mesa.

If there is worm in the veggies then most probably it was grown organically, no pesticides used. Fish sauce I usually add to the soup as it's cooking. No need for salt. Add little and adjust to your preference. The finger chili or the long green pepper is added as well in the soup. Wash the veggies always. I prefer the tamarind which you need to boil with skin on, remove d skin when cooked and mash the tamarind, then add to the soup. Powdered sinigang mix is OK and convenient. I use it there's no tamarind available. The cooked finger chillies can be mashed with fish sauce as condiment as well. But the way you did it perfectly fine.

By making rice the dominant part of the plate, it makes the taste of sinigang less sour - if you prefer it that way, of course. You control the strength of the sour taste as the rice absorbs the flavor. Whatever suits you best.

There are many variants of sinigang and depends on what fruit you use to make the sour soup. Tamarind(sampalok), green mango(manggang hilaw), kamias, and guavas(bayabas) can be used. Also, not only beef or pork can be used but also fishes like bangus, salmon, tilapia, and even shrimps and crabs. There is one variant of sinigang I love and it is sinigang sa miso, you should try it! ❤️ you guys and congrats on your first sinigang!

You can adjust the sourness of sinigang don't put all the sinigang powder just half of it and try if its enough and you can add the rest if you want more sour, Fish sauce is used to season the soup you can use it instead of salt, you can add it on the soup while it is still cooking. You can make a dipping sauce with your meat by mixing fish sauce, chilli, onion and calamansi. Your missing ingredients are okra, ground pepper and pork broth cubes to make your sinigang very rich in flavour.

You could also put the rice in a bowl and pour the sinigang on it. By the way, when I cook sinigang, I also add some fish sauce while boiling, it adds umami flavor.

Go in BAGUIO when the BER months started. Its the best months because its really cold. But the lowest temperature usually december to february. Sometimes till march because the melting snow in japan the cold wind always travel to south which is going to the upper part of the Philippines.

Those small "worms" as the guest Filipina called it, in the eggplant are not worms. Those are larvae of insect pests. The appearance of such larvae from the fruit vegetable is mainly because of the following reasons: 1) an indication of less application of insecticides, by the farmers, to avoid overdose of insecticides to the fruit prior to harvesting or 2) poor insect pest management by the farmer. Sometimes, in the local markets, the appearance of such larvae in the produce seems to be positive, as consumers think that less insecticides were applied, compared to the produce without damage caused by the insect pests. However, this does not apply to all kinds of vegetables. Some vegetables do not need any kind of pesticide to make the appearance of the produce good (e.g. horseradish, kangkong, sweet potato, etc.)

There's a lot of variety of cooking sinigang, it may varies if you use fish, beef or pork and chicken ii you prefer to try it. Our country is divided by various islands and consists of different dialects that is why we have different outlook for cooking. We also had influenced from our colonists way of cooking, the Spanish and Americans...and Japanese too.

"Kangkong" is called water spinach. Sinigang is an easy meal to prepare & cook and wow Justin, your challenge is done for cooking and what we do is mash the chilli pepper into the fish sauce and some calamansi juice to add more flavor and you may dip the meat onto it.

If you want to add more flavor to the pork, you can stir fry it until slightly brown then add onions and tomatoes before adding the water for the soup. But yeah, the way she taught you is the easiest way to cook sinigang. ❤🇵🇭
