The Timber Tavern is complete! We are so happy with how it turned out. Check out part 1 (video link below) to see what this part of the woods looked like before. A true transformation! We used all dead wood and unlike my other videos, chose to use some power tools to speed up the process. Building with a baby takes muuuuch longer!
Many fire cooked meals will be had here. It’s so nice to have custom built counter tops and a space to hang all of our pots and storage space. My favourite feature may be the hidden storage space.. hides all our food prep, a dish water basin, cooler, etc. Makes the camp neat and video ready at all times haha.
We wanted to build this outdoor kitchen so that all food and food prep and smells are away from the cabin so that we are not attracting animals into the cabin.
Caitlin makes an easy one pot Chicken Tortilla Soup - looks like a lot of ingredients but they all go into one pot almost all at once - super easy and delicious (recipe below!). For our first official dinner in the Timber Tavern we make a dinner inspired by Francis Mallmann. Francis is a world renowned fire chef and a big inspiration to the Timber’s! We cooked up his recipe of a seared ribeye steak with toasted brioche, dates, and arugula. We added forest harvested wild leeks that Trustin foraged and portobello mushrooms too. It was SO good. Caitlin is excited to experiment with wild foods and forage more this spring and cook up some delicious meals so stay tuned for more!

Kitchen Build part 1: • Building an Outdoor Ki...
Chicklen Tortilla Soup
Ingredients:
2 tablespoons Olive Oil
1 large onion finely chopped
1 teaspoon minced garlic
1 large jalapeno pepper deseeded and chopped finely
1 tablespoon Chili Powder
1 teaspoon Paprika
1 teaspoon Cumin Powder
1 teaspoon dried Oregano
1 14 ounce can fire roasted crushed tomatoes
3-4 skinless and boneless chicken cut into bite sized pieces
4 cups chicken stock
1 can of corn kernels
1 can of black beans (drained)
1 tablespoon lime juice
1 teaspoon salt
Optional Suggested Toppings: tortilla chips, chopped cilantro, lime juice, sour cream/plain yogurt
Heat olive oil in large pot and add onions, garlic and jalapeno pepper. Saute until the onions are soft. Then add in all the other ingredients and spices except for the chicken, black beans and lime juice. Stir ingredients to mix and bring pot to a boil and then simmer for 5 minutes. Add in chicken and simmer for another 10 minutes. Add black beans and lime juice and simmer for an additional 3 minutes. Serve hot topped with tortilla chips and your favourite toppings! Enjoy! xo

Oh Caitlin, your daughter is absolutely precious. I am reminded of when my daughter was a baby. A suggestion about the wood countertops at the “Timber Tavern” the walnut oil is excellent for treating the wood, but as Trustin alluded to they will need oiled regularly. However that will not disinfect those wood countertops. An ancient, and chemical free, way to disinfect those countertops is to salt them. On RU-vid there is a series entitled “Tales From The Green Valley” in the November episode (part 3 of 12), around the 18 minute time stamp of this documentary series, historian Ruth Goodman demonstrates the 17th Century method of disinfecting wood surfaces using salt. Anyway, just an idea that you might find to be interesting or useful.

I love the sound of the timber cracking and crackling, and the popping, crackling of the fire. And the food looks yummy, probably tastes better out in the open air too. That's what I've discovered when camping. Everything is better in sunshine, warm fresh air.

The wild leeks you refer to we call them ramps. Usually two leaves when mature, mix of taste between onion and garlic to us. We sautee the bulb and leaves as a side, or my wife pickles the bulb. They are all over our property, big patches of them. Last year my wife made a ramp and potato soup, awesome. We scavenge for mushrooms as well. Still learning there.

Really good to see you again, Catlin. Viewing time is tight at the moment, but, hey, there is always room for you and Trustin and your daughter, even if my viewing is a day or so late. Loved the steak sucking shots, and I am sorry to tell you that you have started a relationship between your daughter and yourselves that can descend onto the road to ruin. My son was much the same as her, loving every taste and flavour of whatever his mother and I ate when he was a few months old, but then a few teeth appeared and sucking was not enough, and the only way to safely allow him to taste our food without choking himself was by me chewing it for him and then giving him small amounts. As he got to the age of one and beyond this was often terrible for me, and I recall sitting in a restaurant eating pink snapper, which I totally love, and which he of course loved equally. The chewing bit was fine for me, all that amazing taste and such delicate flavours, but stopping myself from swallowing and passing some of the fish onto him became an act of heroic, or perhaps stoic, accord. I had to put my hand on my throat to stop myself from automatically swallowing, and for me, this became an inner battle of conscious will over unconscious actions, but of course, he just loved the flavours and called out for more and more, and more, and Oh hell, he was just so lucky that he was wonderful and amazing in so many other ways,.to keep our relationship in balance, Seriously, great, amazing, and wonderful to see you so active and getting back to a take on life that exists for and as yourself, as well of course as for your child and Trustin, and looking forward to seeing you in particular and you all in general in the next video.
