Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
When trying to decide what to freeze dry you can start by asking why.
Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
I'm freeze drying because:
Just to freeze dry leftovers?
You want to make your own food for camping/backpacking?
For if/when the SHTF?
For a short term emergency?
You have your own garden and want to freeze dry the food?
You love Costco but don't have a family of 6?
You are good at finding the food sales but only have 1 freezer?
When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

Instead of adding a second dose of Jello just add unflavored jello. We use to do that to make jello that didn't melt for the kids to eat on the go if they put it on the furniture no big deal. No more stains.

That's a great idea. I never thought of that, and we have plenty of unflavored gelatin on hand that we use for other things.

I liked the lighter texture of the regular one. I'll have to try one with 1/2 strength or less and see what that does.

We just used the Jello as crunchy, dry snacks. The V8 juice rehydrates very quickly and completely. 🤣 I have to apologize for many of my older videos. In my focus to keep my older videos very short, most of my older, shorter videos are almost devoid of information! I tried hard to keep the videos down to less then 10 or 15 minutes, no matter what I had to cut out! (Like information!)

Did you use a candy mode or a regular run? Jello looks like it would be fun. Do you like it better than FD candies?

Regular settings. We have the older 2017 model (and we choose not to "upgrade" the firmware) so we do not have the candy mode. Some of the freeze dried candy is SO good! The Jello was only good. Kind of boring next to Bit-O-Honey. Coming soon is a video of LOTS of candy. I did 5 batches, starting at batch 590, for the other #1 child, and I'm going to try to put them all into one video.

@@sharonjennings1282 I don't really know, but I would think that most candy it basically sugar and will never go bad if kept from moisture. (and oxygen?)

It defiantly can be done that way. Our trays are too busy to let the Jello set up on them. We have the older, tilted rack, machine, so we can't put in liquids without prefreezing.

There are so many variables to the dry times; type of food, water content, sugar content, temperature of the food when loading, ambient temperature of the room, how much food in a batch, more than one kind of food in a batch, food volume, how tightly it's packed, thickness on the tray, how well it contacts the tray, how porous the food is, how the food was sliced (this made a huge difference with citrus and pineapple), how clean the vacuum oil is (if it's an oil pump), and I'm sure there are more including the ones you mentioned - the weather - temperature and humidity make a difference! Oh, and of course, which model, year, and firmware it is.

SchoolReports thank you for videos. Lots of good info. If you have time to post details on acrylic insert, I would like to make the same for my fd. I am a newbie and nervously running a milk batch right now and wish I could see what’s going on.

For my first test piece I cut a very accurate circle out of a piece of foamcore and it had gaps up to 3 - 4 mm (1/8"+) around the edge. So instead, I took the seal off and cut a piece of foamcore just a little smaller than the inside of the metal freeze dryer opening. I glued a little handle to the middle of one side and put it into the freeze dryer. Then, I put the seal back in place and pulled the piece of foamcore tight up against it and carefully traced the opening. Next, cut the foamcore disc and test it for fit; if it's good, trace it onto the acrylic. I used 0.075" (1.9mm) thick acrylic, though I'm sure thicker would work great. I cut the acrylic using a scroll saw followed by a little sanding to get it right to the line. On the front face of the disc I glued a few spacers around the edge and a piece in the middle to use as a handle. (These were just some scrap pieces about 1/2" tall) The spacers insure that there is space between the disc and the door, and is about in the middle of the seal each time. I marked where the top is so I can put the acrylic in in the same orientation each time; I also make sure to install the seal in the same direction every time it's removed. Finally, I put a thin strip of self adhesive foam weatherstrip at the back edge of the seal to give the acrylic disc something to bump into so I don't push it all the way inside. The disc seems to work better than the pad that came with the freeze dryer for lowering heat transfer. I'm basing this on the fact that the front of the door does not get as cold with the plastic disc in place as it did with pad. I love how good of a job it has done and have not experienced ANY downside yet. Does this give enough information? If not I could make a video of the process.

SchoolReports Thank you for taking the time to give instructions. My husband or sons have the power tools to make this happen. Thanks also for the video links, the only info on milk is that it exploded in someone’s fd. I’ve learned more from your videos than the book that came with the fd.

@@HebronGrandpa I replaced the original door pad with the acrylic disc because I wanted to be able to video/see the food during processing. I also wanted to have something that I felt would do a better job of minimizing heat transfer through the front. (The seal and door would get very cold, even ice up.) With the disc and the insulation wrapped around the door seal, I believe it accomplishes these goals. It makes it like a double pane window; think jet airplane with their windows and being warm on the inside and -40 outside.
