Perfect French Fries Recipe
Ingredients:
Maris Piper potatoes (or Russet potatoes if in the US)
Ice cubes
Sea salt
Oregano (optional)
Cooking oil (neutral oil with a high smoke point)
Equipment:
Large bowl
Knife
Peeler
Paper towels
Deep fryer or heavy-bottomed pot
Thermometer
Instructions:
Prepare the Potatoes:
Peel the potatoes and place them directly in cold water to prevent oxidation.
Cut the potatoes into uniform strips about 0.5 cm thick.
Rinse the potato strips in cold water, changing the water 2-3 times to remove excess starch.
Add ice cubes to the water to keep the potatoes cool and crisp.
Blanch the Potatoes:
Heat the oil in a deep fryer or heavy-bottomed pot to 130°C (266°F).
Dry the potato strips thoroughly with paper towels to prevent oil splatter.
Blanch the potato strips in the hot oil for 3-5 minutes. They should be cooked through but not crispy.
Remove the potatoes from the oil and place them on paper towels to drain and cool for about 5-10 minutes.
Final Fry:
Increase the oil temperature to 180°C (356°F).
Fry the blanched potatoes in small batches until they are golden brown and crispy, about 2-4 minutes.
Remove the fries from the oil and drain on paper towels.
Season and Serve:
Season the hot fries immediately with sea salt and a pinch of oregano or any seasoning of your choice.
Serve immediately and enjoy!
Tips:
Do not overcrowd the fryer to ensure even cooking.
Use a thermometer to maintain the correct oil temperature for perfect fries.
Experiment with different seasonings like paprika, garlic powder, or parmesan cheese for variety.
