What You'll Need (2 servings):
-1 cup quinoa
- 2 cups of water
-1/2 cup cherry tomatoes, halved
-1 small cucumber, sliced
-1 avocado, cubed
-1 cup chickpeas, rinsed and drained
- 1/2 tsp cumin
- 1/4 tsp chilli pepper
- 1 tsp paprika
- Salt and pepper to taste
-1/4 cup fresh mint
- 1 cup pickled beets (113g)
- Spring mix salad
- 1 lime
Instructions:
Oven preheated to 425F. Drain and season the chickpeas with paprika, cumin, chilli pepper, salt and black pepper. Roast for 20 minutes or until golden brown.
Prepare the Quinoa: Rinse 1 cup of quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
Chop the Veggies: While the quinoa is cooking, chop the cherry tomatoes, cucumber, and avocado.
Assemble the Salad: In a large bowl, combine the cooked quinoa, chopped veggies, chickpeas, and fresh herbs. Drizzle the lime juice over the salad and toss to combine.
