You know it’s a good day when Max smokes over applewood not only low, but also slow.

When i was butchering at an artesianal shop, we would sell the 14 day dry aged ducks for $200/piece to a restaurant that sold each side of a breast for over $100 each. My tip would be to rub with salt inside and out BEFORE going in to dry ager. Also, cook breast off the bone if you want to prevent the gamey flavor.

This is basically how crispy Peking duck was conceived. Someone wanted to store their duck for later.
