I really like this guy. He told his backstory of his upbringing & losing his mother when they were fleeing Ethiopia on the Anthony Bourdain show "Parts Unknown." Got the last name because he was adopted. Wife is a model. I want to try that batter recipe for my fish! :-)
True chefs doesn’t afraid to give out their recipe. Even if you give those tiny details, people won’t be able to cook the exact same way. Because cooking is an art. You can never copy an art.
Been to both restaurants. Sylvia's if you didn't know, like he mentioned, is a very prominent soul food restaurant. I went there for my birthday and had an amazing southern meal. Unfortunately the owner, Sylvia, passed away weeks after. Proud of Black Culture!

To make it crispier u should first put the chicken in the spice mix then in cold water and then back in the mix.That will make it super crispy. I have tried that. Results are awesome!

I'm not African American not even Ethiopian, but I really appreciate that he gives credit to the Southern roots of fried chicken and the African American (Sylvia's) restaurant that's inspired him. He didn't sugar coat it , he didn't pretend like it was all him. I guess this is people mean When they say give credit to the culture you got your ideas from.
I Tried this recipe, I didnt have all of the ingredients used so i had to use what I had, and I didnt marinate the chicken over night, only for an hr. It came out absolutley delicious, super juicy and well seasoned. My husband really loved it and he is usually a tough critic.
While i can not talk about the recipe because i have not tried it yet, i can tell you that this is the best fried chicken video i have seen because it talks about why certain ingredients are used to achieve the also talked about objective. I like that detail. Thank you!
I have two of his cookbooks and let me tell you they was worth every red cent. One is called THE SOUL OF A NEW CUSINE the other is called THE RED ROOSTER. both of them I made some incredible food. But it can take some time to make the butters and sauces and jerk mixes but the rewards ars well worth the effort. Just pick a day you have time to spend the day just cooking. Love this Chief.
I gotta 1 day eat at red rooster sometime. Not to long ago worked in harlem and when I walk home I go past this place near closing time yet can still smell the food and lively crowd enjoying themselves.
I got to eat at Red Rooster and got the yardbird (fried chicken) and it was AMAZING! Not to mention all of the fly people there and amazing music. What a night in Harlem!
I was like," This guy looks kinda black but maybe a little middle eastern as well. Maybe he's Ethiopian." and right as I thought that, he said, " I'm Ethiopian." and I blew my own mind.
I was so excited to try Red Rooster when I was in New York the last time. The food was just okay, but the drinks were very good. I'll go there for drinks but for food, I'll walk up one more block at eat at Sylvia's.
