Really easy, but a bit time consuming. Slice the eggplant, then cover them in salt for at least a couple of hours, put a heavy weight on top to get rid of the moisture. Rinse and pat them dry with towel. Then prepare the usual egg, flour and breadcrumbs (you can season the breadcrumbs with parmesan and some parsley, but here in Italy we use plain breadcrumbs). Deepfry with vegetable oil, season with salt and pepper and let them rest for a little bit. Then you can prepare Eggplant Parmesan or just eat them like that 🤌🏻
