The coating will stick better if you flour the meat first, then egg wash it and then flour it again. I’ve always done it the way you did in this video until one day I learned a better way. Try it, you’ll probably like it better. Great video. Simple and to the point!

Maybe a double wash and flour coat? Thicken up your crust a bit. To keep it from flaking away from meat so much.

Too Bad I could only give it one thumbs up!!!!Heart is a muscle, same as back strap only better. The finest grained steak on the whole animal. You are right in how you cook it up. PERFECT! People that are afraid of it need only know one thing. DON'T OVER COOK IT!!
