❤️ Fried Rice with Mullet Roe Recipe - Cooking with Fen & Lady First
💛 Ingredients (Serves 5):
- Mullet Roe: half bladder
- Sakura Shrimp: half bowl
- Rice: 2 cups (180cc per cup) (Note: 1 cup white rice + 1 cup germinated brown rice + 2 cups water)
- Eggs: 2
- Onion: 1/4
- Green Onions: 4 stalks
💛Seasonings:
- Olive oil: approximately 100cc
- Rice wine: 1 tablespoon
- Black pepper powder: a little
- White pepper powder: a little
- Salt: a little (adjust before adding mullet roe to fried rice)
- MSG: a little (optional)
💛Main Tools:
- Non-stick pan
❤️Instructions:
1. Cooking Rice:
- In a pot, add one cup of white rice and one cup of germinated brown rice. Add two cups of water. When the rice is cooked, keep it warm.
- If using leftover rice, microwave it before frying.
2. Frying Rice with Quality Oil:
- Use olive oil to enhance the aroma and taste. Lady First prefers using olive oil for health reasons.
- Rich in unsaturated fatty acids, vitamin E, and antioxidant olive polyphenols.
- Longevity of the Mediterranean diet.
- Withstands high temperatures (about 210-240 degrees Celsius), suitable for frying and deep-frying.
- Recommended by Taiwan's Cuisine Queen, olive oil is perfect for Chinese cuisine.
3. Pan-frying Mullet Roe:
- Heat olive oil in a pan over medium-low heat, add mullet roe to the pan.
- Fry on both sides before adding rice wine, approximately 30 seconds per side. (Takes about 2 minutes in total)
- Fry at 160 degrees Celsius to slightly crisp the surface of the mullet roe. Add rice wine for enhanced flavor.
4. Sautéing Sakura Shrimp:
- In the same pan, sauté the Sakura Shrimp over low heat until aromatic.
- Olive oil-sautéed Sakura Shrimp enhances the overall freshness.
5. Cutting Vegetables and Mullet Roe:
- Dice the onion, finely chop the green onions, and cut the mullet roe into small pieces (or preferred size).
6. Fried Rice Process:
- Fry the eggs with olive oil.
- Add seasonings such as MSG, white pepper, and black pepper for flavor.
- Add diced onions and 2 cups of rice, stir-fry, and add a pinch of salt.
- Add chopped green onions, Sakura Shrimp, mullet roe, etc., to add layers to the fried rice.
- If the fried rice becomes too salty after adding Sakura Shrimp and mullet roe, add more rice and stir-fry to adjust to your preferred saltiness.
- Finally, transfer the fried rice to a plate, place the mullet roe on top, and drizzle a little olive oil on the fried rice for a shiny and charming appearance.
