There are some interesting videos here on RU-vid about how English people grew their food during WWII. (I watched them several years ago, so I don't exactly remember whose channel they were on). One of the ways they preserved their vegetables was to construct earthen mounds, and they buried the vegetables in these mounds. The cool, dark conditions kept the veggies quite a while.
