After 39 days, I've finally bottled my Cherry Wine. I think it turned out pretty good, although the ABV is pretty high at 16.28%. I would expect it'll mellow out quite nicely after several months in the bottle. It's got a surprisingly nice amber/orange color in the bottle, although it looked quite a bit more red in the Carboy. @HowToDoneRight

What a wonderful overview! Your video perfectly illustrates the point that preference is personal. Some things will come back across the board and usually they boil down to a few elements: 1) balance: a good balance (acidity, tannins, sweetness) will come across as more pleasant. One should slightly dominate, the two others should support that one. Think of it like a triangle. 2) like in computer programming, crap in = crap out. Input influences output. Ripe fruit equals more flavour. Incidentally, if you want lots of peach flavour (notoriously difficult to get) then your peaches should he as ripe as possible, come off the stone easily and do not remove the skins as they add A LOT of flavour. 3) patience. Fast fermentation equals loss of flavour, so if your fermentation is violent, move your fermenter to a cooler spot. You’ll lose less flavour through the airlock 4) light. I noticed you use clear bottles. Especially with darker fruit, protect the delicate colour and berry flavours by using coloured glass bottles. Wine makers have heen doing this for ages and there is a reason they do. Your blueberry might have benefited from this. Blueberry is a very delicate flavour. The mixed berry, thanks to the seeds that contain more tannins, might have kept better thanks to the higher tannic value… or it’s just younger (still binge watching, haven’t gotten to the mixed berry and blueberry wines yet). Thank you for an excellent video.

Yeah dark bottles is great... but I keep all my wine in a dark wine closet... I like to see the color in wine as ages.

Really enjoying your channel. I can't wait to get started. I just wondered if you notice any difference in the quality of the wine if brewed in a 5 gallon batch compared to a smaller 1 gallon batch? I've heard people say bigger is better?
@HowToDoneRight
@HowToDoneRight 2 года назад
No flavor difference. In my opinion it's too much time to make just 1 gallon batches. 1 gallon batches will give you 4 to 5 bottles and that may take you 4 to 6 months to reap rewards. 5 gallon batches will give you 20 to 25 bottles more worth it but alot of wine... that's why you will see recent videos me doing 3 gallon batches And not as hard on the back lugging carboys around... but no difference in quality at all. Great question And thanks for subscribing AND watching the channel. 👍👍😁😁🍷🍷

Please help! I want to grow pears and apples inside of the wine bottles before filling them with my homemade wine (recipe from your video). Is this at all possible? Or will the whole fruit rot or spoil the wine? I of course plan to wash and sanitize the bottle with the fruit in it before I add the wine. Do you have any suggestions for me?
@HowToDoneRight
@HowToDoneRight 2 года назад
Wow that Is thinking outside the box?😁😁 i got a little confused about your question you said Grow then you said about the fruit inside. If you mean adding fruit to the bottle then add wine to it that Is dangerous because the fruit would ferment release carbon dioxide and the bottles would explode under pressure.

@HowToDoneRight
@HowToDoneRight 2 года назад
That's funny you ask that. I have a meter and never use it. Generally if you have pour water quality you could test the ph. You want it between 3.4 and 3.8. I even have a ph meter just never use it because i have great water quality. If i would get off taste wine i would test but wine is perfect each time with this recipe. If you wanted to age wine for longer periods of time you may want to mess with ph. There's all kinds of test kits for wine i just think it's not necessary in my situation. I'd be curious if some of my other experienced wine makers are testing it. Great question. 👍👍
