Cooking bacon can seem like something most people know how to do but if you really want to take your bacon cooking to the next level, you’d better consider the following.
Method of cooking your bacon (frying or grilling) - This can be a difficult choice especially if you have a dry cured bacon as I think this kind of cured bacon works best in a pan gently rendering down over time. It’s certainly a lot less aggressive than you’d see under a grill and of course under a grill the fat will run-off and drip away so you’re essentially losing flavour
Temperature in the pan - The temperature in the pan is crucial when frying, too hot and you’ll burn the fat causing the bacon to become bitter and dry. This is for me he biggest problem when cooking bacon for most people and can be a real problem if you’re cooking over an open fire. Careful attention to the heat in the bap is literally the difference between a successful outcome of a complete disaster.
Type of bacon, fatty or lean, streaky or back bacon - Whether you have a lean bacon or one with lots of fat on it will determine how long you’re going to be cooking it for. If your bacon has lots of fat on it you need to take time to allow the fat to render down and leave behind the

Thanks for the video! I’m from Ludlow and seeing all the good meats around inspired me to cure my own years ago. Love it- currently got a Christmas ham brining in the fridge 😃 The fat is the best bit and for me the lack of decent fat in shop bought bacon is almost as bad as the shrinkage and water

Perfect. You can see that's good bacon by the way it cooks. I want some now. The only addition I make to this method is to cook bacon with rind on the rind edge for a few minutes at the start, clamping it between some tongs.

Another lovely and informative video, Mate. Thank You for taking the time and effort to make it. When I cook my dry cured bacon, I start in a dry, cold pan and very gently bring the heat up so that the Bacon almost confit's in the pan...and....that rendered, smoky, delicious fat...Sigh! Schmeared on a bit of decent Toast, makes the Angels Sing!!!

Hi Turan For me, nothing beats homemade dry cured cold smoked bacon but that Beckland bacon does look fantastic! Have a great Christmas & New Year and looking forward to your 2024 posts..

I usually poach bacon in water and when fats mostly melted i like to cook them in pan, I've got ton of boiled bacon up my fridge 😅 give them a go!
