Growing up we only had lard. We rendered our own lard (and made our own fried pig skins in the process). My granny made the best fried chicken (along with about a thousand other things) you ever tasted. Those were different times, drinking fresh milk (I milked the cow twice a day), making our own butter, growing all our own veggies. We had cows, chickens, pigs, ducks and rabbits. The freezer was always full.

Speechless! I cannot believe it! After seven years vegan, two of them raw vegan I find myself here knowing every word is true. I am appreciative my friend. I miss him so much. I worry about him too - hope he's happy and thriving. He was too nice, and caring for the crazy-haters on internet. I wish he'd just ignored them and blocked them and stayed on his path to try to help those of us who struggled with vegan diet gurus, mainstream doctors and pharm industry lying to us and putting us into early graves. I wish he'd check in with a new video from time to time, to let us know how he's doing. I can't blame him for saying. "Screw them, if they don't want to listen - why waste my time". But it was the vegans who were heckling him - not those of us fat, sicky, nearly dead who are extremely sensitive to carbs on high carb diets.

I've recently started a low carb, actually keto diet. The strange thing about it is that in 1964 when I came to the US at 5 years of age, this is how we ate with the exception of toritllas some rice and beans. My great grand father lived 106, great grand mother 99, grand mother 94, mom and dad both 92. We then adopted a more oil and starch diet. Diabetes came along. There's a book called, "good calories bad calories by Gary Tauber. It's a study of the change in the American diet. This food is delicious. Thank you, it brings me back to my old way of eating.

Real tortillas should have high fat content as well. Around 150g lard for 500g of flour. It's amazing how pretty much every carb was eaten with some kind of fat back in the day. Potatoes? Melt some butter on them. Bread? (not to mention sourdough is much less spiking than white bread) Spread some butter there. Pasta? (which were made with eggs also) Give them splash of olive oil! And that's a fact that fat slows down carb digestion, making them not spiking glucose and insulin in blood. Also vinegar with salads which is also known to slow down spikes of glucose. It all has been there.

I hate to say it but the lard he used is not real healthy lard either. It is hydrogenated to make it shelf stable not needing Refrigeration. That makes it unhealthy just like hydrogenated vegetable oils. You need a pure lard like Smithfield recipe ready lard it has to be kept refrigerated.

Bob, unless you have more chicken in the pan, turn off the stove as soon as the last piece is out of the pan and, move the pan to a cold burner. Lard smokes easily and the oil temperature increases even faster with the lid on. Leaving it on a hot burner is asking for a fire and/or a flashburn when you remove the lid. I happen to like you and your videos. This is why I'm leaving this comment.💜

My grandparents were born in the early 1900's and they used lard for frying, ate red meat daily, ate bread 3 times a day with each meal, drank whole milk, etc. I believe that is the way we should eat. The things they didn't do was open a can, use the microwave, eat frozen meals, and certainly did not drink soda and eat heavy sweets. Love the video, I'm gonna try the recipe - looks so amazing.

Thank you so much Bob! I have been doing the LCHF plan for about 5 or 6 weeks now. I've lost about 12-15 pounds so far. My wife will be starting on it soon as well. She is type 2 diabetic and we have seen first hand the devastating effects diabetes has on someone. Her mom passed about 17 years ago from complications of diabetes, (double amputee), and her oldest brother is currently in assisted living because of his diabetes, (ALSO a double amputee). It amazes me that for decades what was passed off as good nutrition is actually, in no small part, responsible for the current health crisis this country now faces. Thanks again for your videos. I am now a subscriber and Butter Bob fan!! Keep up the great work!

No idea who may see this comment, but here goes - I put the chicken drumsticks in a pan, garlic and onion powder (no salt yet!) and roast in the oven for 40-45 minutes, depending on the size of the pieces. Coarse salt on the chicken when it’s done. There’s juice on the pan when it comes out and I have found that it’s not fat, it’s collagen (because it gels). Really good for your bones, skin, hair, etc. I save the chicken juice and drizzle it on top before eating along with some butter. 😋 It’s less of a mess for me to clean up in the kitchen too!

Never thought Lard was good for you, but I'm going to give it a try. I think I'm staying too low on protein as well as fat. They were different all the time. Finally January 20th, I woke up with horrible lower right quadrant pain in my stomach and my daughter took me to the hospital. I had colon cancer. Went through all that, but the surgeon got it all in surgery. So no chemo or anything else. While recovering, I started craving donuts and my kids would bring me donuts and pizza. I like having crust on my chicken so I just mash up some regular pork rinds into a powder, dip the chicken into an egg wash (just a scrambled up egg) and then into the pork rind dust. Sometimes I will dip it back into the egg and then the pork rinds again if I want extra crispy. Then fry as normal. Still no carbs and tons of fat. Tastes great too, even though I hate pork rinds.

There's a famous chicken place over in Dallas that my wife heard about a few years back. She wanted to know what all the hubbub was so we went there late one night and the drivethru had a line wrapped around the block. Once we finally got our chicken we dug and and I realized the secret to their success. They were using lard rather than the "vegetable" oil every other fried chicken joint uses. Lard gives food a better flavor because it's a real food product. "Vegetable" oil is NOT a real food product.

We have been on the keto diet for a week, so just learning a lot of new ways to eat. It's funny I've heard all my adult life about how bad lard is for your body, and how it's the reason most of the people from the previous generation developed clogged arteries and got heart disease, and proceeded to die off from heart attacks. My parents both used lard for many years and both died from heart disease. So you can understand how hard it is for me to accept lard as being good for the body. But I'm no scientist, and I know we've been lied to about so many things over the years, so it's likely we were lied to about lard also.

@@Cait683 My Mom had a glazed steel basin that the lard was kept in. Just scooped out enough for the job in hand, and poured it back in when finished. Maybe through a tea strainer if there were bits in the lard such as loose bread crumbs or the like, but most often not. Then back in the fridge for next time... Every six months or so she would buy a kilo or two of plain fat from the butcher and render it down to top up the bucket. Everything needing frying was done in the same lard. Eggs, sausages, chops, chicken, stir fry vegetables, you name it. Best tasting food ever... We had very kosher Jewish friends so she used beef fat rather than pork fat.

Thank you Bob! I'd be curious to know where Bob lives, city and state - because the country walk you took in your other video was very beautiful. Absolutely. I was raised in the 1960's. We had dehydrated veggies including instant potatoes, instant 2 minute noodles, chocolate Milo or Quick, plenty of meats in the fridge for the adults but as kids, we went straight to the rubbish. I had no idea what fresh veg tasted like until I left home in 1976. To this day my jaws tingle and I salivate like a rabid dog at the thought of buttered spinach and cabbage introduced to me by my future hubby.
