The car almost stalled so he had to give it a little nudge with the clutch in the first corner. After that he changed a gear with clutch in the lower speeds probably to make it a bit more easier for the gearbox and in one hairpin he just pre-emptively pressed the clutch so that the car would not stall again.
In this case, its not clutch kick to get the back end out, he does it when the car is already pointing in the right direction, its so the car doesn't stall on the super slow hairpins. I think what he's feeling is as he rounds the hairpin, his throttle is to the floor and the revs arent rising like he'd like (ie engine is starting to bog) so he does a quick clutch in to get the engine revs up.
