Wsalam Adnan, I already upload a detailed video on pizza dough and weight etc. If you make pizza dough in winter keep it at least 4 hours in room temperature out side the refrigerator and then refrigerate. If you make that in summer hot weather rest the dough about 30 min at room temperature and then refrigerate the dough. Refrigerate temperature should be between 2 to 5f not greater then 6. If dough is very cold take it out 30 min before use. For the 30 to 40 min delivery. Rule is always maximum delivery range is 3 KM or 10 min from your store. Pizza normally ready in 5 minutes 2 minutes counter time and 3 minutes oven time. Very easy and simple. For the dough make sure you use exact quantity of yeast 1 gram for 1 kg flour. If you add sugar in the dough your dough will not be good in taste after 2 to 3 days. If you have any other question please feel free to ask. Thank you

Hi dear, For the temperature maintaining mostly we are busy at lunch time and then it’s start getting busy again about 4pm but depending on your location. For wood burning oven temperature is very important you must have to keep the floor warm at minimum 500 all the time. What you can do for that once your oven it’s ready and you know that no more customer will come between (for example) 1 to 4pm you can put small wood i the oven like that you will have flame all the time. And Trick is you can keep one dry wood in another corner so when you have to make pizza put that wood on wire wood you will see how quickly that burn and give you a good pizza. FOR THE DOUGH. Don’t use sugar in the dough because if you add sugar in your dough then you can’t control the fermentation and your dough become taste less next day. Second thing when you are not in busy hours keep your dough in refrigerator for 30 min and take out for 30 min that make your dough life longer. For the wood Best wood is 14inch dry wood not semi dry semi dry took more time to burn. If you have any other question please feel free to ask. Here we used total six KG flour for that we used 4 litter water. That quantity is for Italian pizza dough but if you are making other regular dough you can simply used 56% or 60% total liquid in flour for example for ten KG flour water is 6 KG.
