Ingredients : 380g White Flour
150g Powdered Sugar
400g Plum Jam
200g Unsalted Butter ( room temperature )
2 Eggs
80g Almond Flour
Lemon zest from 1 Lemon
2 Sachets of Vanilla Sugar ( 2x8g )
1tsp Baking Powder
A pinch of Salt
+ Powdered Sugar for dusting

Make the dough by mixing the butter in a bowl for 1 minute. Add in the powdered sugar and the vanilla sugar sachets and keep mixing. Add in the 2 eggs and mix for a bit , then add lemon zest, a pinch of salt , almond flour , baking powder and white flour. Make sure everything is mixed together by using a spatula .
Sprinkle a bit of flour on the table and knead the dough for 1-2 minutes. Once you have a dense , slightly sticky dough , wrap it up in cling film and refrigerate for 30 minutes , or freeze for 15 minutes. When the time is up , take the dough out of the fridge and divide it in 2 halves . Save one half for later and refrigerate it .
Roll out the other half onto the table ( dough has to be 0,5cm thick ) and use 2 round cookie cutters to cut out the cookies. I also use 2 heart shaped cookie cutters as well .
Place the cookies onto a tray and bake on 180 degreesC for 10-12minutes or until golden brown on the edges . Let the cookies cool down completely before filling them with jam . Use powdered sugar for the cookies that have the shapes cut out , and the teaspoon of jam for the whole cookies .
Place the cut out cookie on top of the jam and you get the final cookie . The cookies need to be stored in a cool place for 2-3 hours before serving . Enjoy!
