Yay! Finally getting a correctly set OPV, catching up to what Breville has been doing since about 2010 on the BDB and 2020 on their Barista line-up. Jokes aside, all manufacturers have something to learn from each other. Breville certainly needs to implement more metal or at least more robust internal componenst like gaggia has been doing for decades. Good review, Matt!

Classic machine! When one of my friends was interested to get into espresso I recommended the Gaggia Classic to him over a DeLonghi Dedica and he did not regret it. Also looks amazing if you color-match with a Eureka Mignon in white.

I picked up my Gaggai Classic off eBay in 2009 for $235 AUD. It's finally starting to wear down, but honestly no real issue. I'm in the market for a new machine and my budget is much higher now. But I just cant stop thinking about getting another one. Great machine and shockingly built to last and easy to repair.

This is my first espresso machine, and I LOVE IT! I have it in this “Industrial Grey” color, and it is beautiful. Only cosmetic mods so far (Low-profile drip tray, bottomless portafilter and knob in olive wood from Shades of Coffee, UK). I also purchased the PID/Pressure gauge/Dimmer mods from Shades, but have not installed them yet. Honestly, there’s no real need IMO with the 9-bar spring on board. Absolutely delicious espresso from this machine as-is! My first grinder was the Baratza Encore ESP (Also excellent 1st grinder), and I am updating that to the Eureka Mignon Zero in Matte Black. ❤ Thanks for the review ❤

Still a slap dunk in my opinion. But as said in the outro, I think people would definitely be will to pay $150-200 ish more for the PID to be factory installed. Hope Gaggia sees this!

​@@LifestyleLab_the cheapest they could get it with a pid would be at the price of the Profitec Go. Around 800 Euros. If you want that, get the Go. I would say mainly the biggest cost for a PID feature would be Testing for longivity and also training support and maintaince for the new machines. That all needs to be added to the cost of the new machine making it way higher than 1-200 per unit. Atm you have a machine that rarely if ever breaks. Add electronics and pid that needs to be also somehow designed properly and added Inside, and also expect it to last or deal with the countless repairs.

I agree that they should at least provide an option for a higher price to have a PID included. This is the only reason I am holding out, because I know, based on my purchase history, as soon as I would purchase this one, there would be a version with a PID option shortly after. :). I don't want to purchase one with an after market PID. I want one straight form Gaggia themselves.

If it had a PID I would've thought about buying it. But this way all the mods I made are not worth investing again. But definitely an improvement that makes it the no 1 choice in this price category.

Thanks for you channel, really enjoy your reviews. I bought the GCP about 2 years ago based on yours and a number of reviews. They all kept coming back to the fact that the machine is a tank and can make very good espresso. Since I don’t drink straight espresso and add a touch of sugar and milk (end up with a cappuccino or latte) I assume making any mods on the machine is a moot point?

Great overview! To me, this just a rebrand of an extremely outdated machine. 9 bar is nice but I still think for most people, the Bambino is a much better option unless they want to mod. If they had just added a PID, this could be a winner. I don't see any reason not to just get a used Gaggia that's pre-modded with a PID.

From what i know it comes with a 9bar OPV spring just for the US model. The EU and others come with the same old spring that needs replacing

Having a PID upgrade is great but it depends how much you can configure that PID like you can with the Mr Shades ones

what pressure was it before they went to 9 bar? . I think a light for the water tank would be a nice addition as its really hard to see the water level. A portafilter that sits level would be a nice idea also, a little bit on the end of the handle would be all that is required.

How are people supposed to fit cups and a scale under the double spout? Also weak steam wand and temperature surfing were also my biggest gripes so disappointing to see no changes there.

I've used older Gaggia Classics as well as the 2023 model (my home driver). The temp is pretty consistent and stable if you have the machine on from 30-50 min. Still would swap out mine for a PID that isn't distracting like most of the after market controllers. Id still get it again and love the Classic. Eventually want to upgrade down the line but it still gets me 90% of the way IMO

Does the EVO in north america has the auto shut-off ? I came across knowing about this feature for all European units seemingly labeled the ECO. But I'm unsure if we get it on north american units.

Really thinking about this machine. Budget is tight though and as a result I would be using it completely stock for a while. This would be an upgrade from my nespresso machine which I honestly will likely still use on days when I have to be up early for work since convenience is just great. The only thing holding me back is just being scared of the whole ordeal lol. The breville bambino is very enticing as well. I’d 100% go for that if it were as use repairable as the gaggia. My nespresso has been a workhorse of daily use for nearly 5 years but I’m admittedly scared of when it will croak given before it I had used keurig and had two machines die after 1 and 2 years

You said it yourself, it’s an evolution, not a complete revamp. There’s no reason to be disappointed that they’re upgrading the machine without increasing the price. There are already options out there for people in the market with a slightly higher budget who want PID.

I agree. Their top priority is keeping the GCP at the $500 price point. If that’s your budget and you want something more robust than a breville, then the GCP is kind of the only option. I’d imagine there are A LOT more people shopping $500 machines than $500+ machines and Gaggia knows that. If they sold this at $800 with a PID and nicer finishing they would probably lose a lot more customers that were willing to buy at $500 than they would gain. They almost need a plus version in addition to this with the upgrades people want for $700-800.

Id like a pid with a display and timer. Cant be very expensive anymore and a stainless steel boiler. Im still a bit sceptical abouthaving plastics in the boiler since itll still expand and contract with heat

@@LifestyleLab_ I remember looking at the Profitec Go when it was released. In the US I believe the release price was the same as the ECM Casa V. However in Australia, the price was raised by $800. I have just checked the prices, and the Casa has gone up about $180 and the Go has risen $100. That makes the Go $2000 and the ECM Classika, which was $2200 has risen to $2380.

The Classic was my first machine - they're great! One thing you didn't mention is the Rancilio Silvia. It too is well under $1000 and only costs slightly more than the Classic Pro Evo. But it's a superior machine in every way and definitely worth the little extra IMHO.

Years ago Gaggia Classic had a stainless steel boiler but unfortunately Gaggia returned to aluminium again. How a great update would that be: a stainless steel boiler. Anyway it would be a great improvement.

The thing I'm most disappointed about is the lack of an air-sealed water reservoir. The biggest problem I have with my Gaggia Classic Pro is that the water reservoir is essentially "open air". I have to change the water, and hand-wash the two rubber hoses every single day. I find hair, dust, and sometimes insects in the water. The fact that it has such a large water reservoir seems (on the surface) to be a nice feature, but given the fact that the boiler is so small and slow, you won't realistically be making more than 4 shots in the morning anyways. The idea that you could fill up this reservoir, and use all of that water before the water is fouled is dubious.

Also, it's a little annoying that they haven't improved the drip tray design. Those widely spaced holes were more of a "fashion over function" design choice by Gaggia. In practice, espresso doesn't actually fall through these holes effectively. Spilled espresso runs over the edge of the tray nearly every time.

I use water filtered through a brita as James Hoffman has suggested in at least one video that it is a neutral pH so it doesn't affect the flavor. This also means that build up of minerals is less likely. Your issues with it being open sound like environment issues rather than issues with the GCP. Perhaps an air purifier could remove hair and dust from the air, but I would suggest filling the machine from the top, rather than removing the tank as that's really the only explanation for the issues you are experiencing.

Easy fix... You can use a bottle lid below the water tank and will disappear the space on top of it.

If you’re looking that inexpensive, I’d recommend just going with a Nespresso Original setup. Or, ideally pay a bit more for a Delonghi Dedica or Breville Bambino. We don’t really review super budget machines like the one you saw at CT. They just aren’t good options.

I’m not sure that kind of beast exists, at least not to my knowledge. Least expensive options with flow control are generally heat exchangers, unless you’re willing to modify a Gaggia or Breville Dual Boiler. TECHNICALLY, the cheapest for just espresso is the Flair 58. Fantastic option for espresso only

As someone who is looking to get their first espresso machine and the DF64 should I just wait for a model with the PID like you mentioned and other upgrades or am I okay to get the classic evo pro? I am moving from an Aeropress :) and I don't know whether to get this or the Bambino plus from Breville

If you’re looking for just espresso, get this and don’t look back. Absolutely best option you have. If you’re looking to steam a lot of milk based drinks, get the Bambino Plus

@@LifestyleLab_ Thank you very much! 🥹 that helps a lot! I am leaning towards this because when I get a good cup of espresso I tend to drink it without any additives. I don't mind a cappuccino but I really need it for my aeropress as the espresso quality takes a hit so the milk helps then. I'll probably have just espresso more often if the quality is as good as everyone praises ☺ Appreciate your time and help!

@piplup10203854 good beans, DF64, and a Gaggia Classic will product equal or better shots to most cafes once dialed in properly. The user will be the limiting factor at that point, which you’ll learn quick :)

$500 and under you're essentially just deciding between the Gaggia and the Breville Bambino / Bambino Plus. Get the Gaggia if you'll be drinking straight espresso or 50/50 espresso and milk drinks, get either of the Breville's if you'll be mainly making lattes & cappuccinos

Gaggia if it does not innovate or improve on their existing lineup it will be overtaken by newer brand like Turin Legato or MiiCoffee, it is running fast behind. You can review if you like.

Assuming a good grinder on both, the GCP is going to make a superior shot. Temp surfing isn’t as big of a deal as it’s cracked up to be.

The Gaggia Classic Pro is a perfectly capable machine stock from the factory. Especially with these new updates. There's no need to be diving into flow control etc unless you are VERY deep down the rabbit hole of espresso, and have a $1000+ grinder to go along with it. The grinder is the most important part.

@gerardiucci2537 I certainly wouldn’t recommend using a hand grinder every day for espresso. While it’s a nice idea, it gets very tiring very quickly. On the budget end the Baratza Encore ESP is fantastic. Up from there, I’ve really been enjoying the Eureka Specialita and Mahlkonig X54. On the high end, DF83 Gen 2 or Niche Duo

Does the brew temp light go on and off occasionally on idle? Mine seems to go on and off every 2 minutes or s. Is that normal? Will be off for 5 seconds and turn back on.

Yes, this is the machine regulating the boiler temperature. When it drops below the set temp, the heater turns on

Good power once up to steaming pressure. A good tip is to start steaming about 10 seconds before the steam light actually comes on to have better performance. Will steam a single drink in around 30 seconds

PID are pretty far out on the diminishing return curve. I've made equally good coffee from this machine and my GS 3. Don't get sucked into the hype people, unless you can really afford an expensive espresso machine.

Problem is, The 9bar version is only available in the US, & not in the UK, & they won’t ship to UK, So if you buy it in the UK, it’s still 15bar😞

A PID controls the temperature a little more precisely, and also allows you to adjust the temperature usually in 1° increments.

Technically, it stands for Proportional-integral-derivative controller Practically for you, it means you have the ability to adjust the temperature of the brew boiler, and have it be held there within plus minus a degree or two

That wouldn't really be a review because they'd obviously be very biased in favour of their own products... I'm sure a machine overview or advertisement exists from either Gaggia or one of their distributors

A Classic with a 9 bar mod. Meh. PID would have been nice. I can surf OK (I think, hard to tell without actual temp reading), but would be nice to not have to think about it.

What coating is used over the Aluminum boiler's surface? Is the brass brew group of a Lead-free variety?

The coating on the boiler is made from EXELIA 3010/B242. An FDA reviewed material that has replaced teflon in a lot of use cases. Not 100% confident on the lead content of the group head, so don’t want to speak on that without being certain.

That’s fair! Brass is used often in a lot of espresso machines, but it’s possible to find some without. Problem is, those will often be on the lower end and therefore be using plastic internal tubing. So if you’re being concerned with materials, it’s often a story of two evils

Lead free brass is available and a stainless boiler liner would seem a better choice. I've seen reports of flaking of the coating. @@LifestyleLab_

How I would love to see a company make a ready to use out of the box machine, built with safe, quality parts(stainless steel, not alum), that makes espresso only! The cost of the milk steamer eliminated, could be used for a more "complete" espresso machine. Not everybody likes milk drinks.

@@LifestyleLab_ They can keep it for $600, and it looks to be a pain in the ass. Take the steaming function off the Gaggia or the Bambino, and what would the cost be? My point is an affordable espresso machine. Think, the 1990 Krups 964 Novo! Yes, it had a wand, but Swiss built to last, and 30+ years ago.

The process on the Flair 58 is verry straightforward, makes some of the best espresso I’ve had, and will last a lifetime If you’re looking more traditional maybe La Pavoni?

But the general point stands - over a Bambino or Bambino Plus with equivalent standalone grinders, are you really getting anything better besides 58mm? A several tradeoffs for that, as well.

Let's be fair, this is a Volkwagen Golf. Gaggia's inability to water down the model by introducing a proper PID machine is understandable from a business perspective, but frustrating from a consumer standpoint. I mean, why would anyone buy a Golf if there's a Golf Premium which costs 50% more. That said, what the market would actually look like if they did a proper Pro model is currently an unknown as the Classic doesn't have any competition. Rancilio Silvia is not made for one coffee at a time. E61 machines take 3 lifetimes to heat up. Right now we can only hope for China to create a machine that will replace the Classic as Gaggia doesn't have the balls to take a risk.

Have you heard of the Profitec GO?? Don't listen ti him. For under 1000$ either get the Bambino if you do milk drinks or the Profitec Go if you don't.

Nonsense reply. Profitec Go is still under 1000$. Your claim in this video was that for sub 1000$ the GCP is your go to recommendation with is not a great tip in 2023 IMO.

@Phil_OG if you listen to the video, I said it’s the undisputed top pick under $500, and people with a budget of $1000 still often end up going with it. I’d recommend someone to buy the GCP and an $800 grinder over the Profitec GO and a $300 grinder any day of the week.

Honestly my go to recommendation for people now is a used Breville dual boiler and some entry level espresso grinder. And I charge a small fee for doing the orings and flipping the steam seals. We all win I hate the gaggia with a passion 😂

Concerned about the safety of that coating over aluminum given all the recent studies on nonstick coatings. Why would anyone buy this over a Profitec Go? Selling this in 2023 without a cheap added Chinese PID is criminal. PIDs aren't new or expensive tech

Clearly you have zero clue about product design and manufacturing and also building a proper testing and support for new features. You do not take only what the cheap shit pid costs but you need to spend in testing, how much it can take, how long, which one, train support for the new system, maintain it, invest in the countless repairs from faulty "cheap Chinese pids" et etc etc. So your price would be at Profitec Go. At that point, it makes no sense to invest.
