Galouti Kabab from Maimoona Yasmeen's Recipes
For Minced Mutton/Kheema Marination:
Ingredients:
Minced Mutton/Kheema - 1/2 Kg
Raw Papaya Paste - 2 tbsp
Black Pepper Powder - 1/2 tsp
Ginger Garlic Paste - 1 tbsp
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/4th tsp
Green Chillies (medium) - 2 (diced)
Chopped Coriander - 2 tbsp
Salt - 1 tsp
Procedure:
1. Add all the spices in minced mutton like ginger garlic paste, black pepper powder, turmeric powder, salt, red chilli powder, green chillies, chopped coriander and raw papaya paste.
2. Mix Well. Keep the marinated Minced Mutton for 2 hrs in the refrigerator.
For the Spice Powder:
Ingredients:
Poppy Seeds/Khash khash - 2 tbsp
Bay Leaf - 1
Black Cloves/Laung - 2
Cardamom/Elaichi - 2
Cinnamon/Dalchini - 4 small sticks
Caraway Seeds/Shah Zeera - 1 tsp
Mace/Javitri - 1/4th of the whole
Procedure:
1. Roast Poppy Seeds/Khash Khash till light brown.
2. Grind all the spices together with poppy seeds into a fine powder and keep aside.
Final preparation:
Ingredients:
Marinated minced mutton/marinated kheema
Spice Powder
Onion (150 grms) - sliced
Salt - as per the taste (or 1/2 tsp)
Lemon Juice or Vinegar - 1 tbsp
Chickpea Flour/Besan - 2 tbsp
Oil - 1/2 cup (use for frying the onions and use the remaining oil for frying the kababs)
Clarified Butter/Pure Ghee - as per the requirement
Procedure:
1. Add oil to the pan. When the oil is hot, add thinly sliced onion (Slice the onion vertically).
2. Fry till the onions turn brown and crisp.
3. Add the spice powder to the marinated minced mutton.
4. Add crispy fried onions.
5. Grind minced mutton into a fine paste without using water.
6. Adjust salt as per the taste (Here, I have added 1/2 tsp salt).
7. Mix Well.
8. Dampen the palms with water and mold into round kababs.
9. Add 1 tbsp oil and 1/2 tbsp clarified butter/pure ghee to a frying pan. Use clarified butter in smaller quantity to prevent breaking of the kababs.
10. Add Kababs to the frying pan.
11. Semi-fry on both sides till the kababs turn brown.
Softer Galouti Kababs are ready - Serve hot
