Halabi Kebab, a delicious and lip smacking Middle Eastern Dish shown in a simple way without using an oven. Try these quick, easy to prepare and tasty Kebabs at your home.

For the Spice Powder:
Ingredients:
Cumin Seeds/Zeera - 1 1/2 tsp
Coriander Seeds/Dhaniya - 1 1/2 tsp
Nutmeg/Jaiphal - a very small piece
Dried Ginger/Sonth - a small piece
Peppercorns/Kali Mirch - 15
Cinnamon (small sticks) - 4
Cardamoms/Elaichi -4
Black Cloves/Lavang - 3
Whole Dry Red Chillies - 6
Procedure:
1. Grind the above spices together into a fine powder.
For the Kebabs:
Ingredients:
Boneless Mutton - 1/2 Kg
Almonds/Badam - 2 tbsp
Salt/Namak - 1 tsp
Onion/Pyaz - 1, diced
Ground Spice Powder
Oil - 1/4th cup
Procedure:
1. Grind almonds to a powder (in a mixer grinder).
2. Add boneless mutton to the ground almonds and grind into a paste (you can grind in two turns).
3. Add this mutton paste to a bowl.
4. Add salt, ground spice powder and diced onion to the mutton paste. Mix well.
5. Mold into cylindrical shaped kebabs.
6. Add oil to a frying pan.
7. Lower the kababs into the pan (you can fry in two turns).
8. Close the lid and flip when one side is cooked properly.
9. Again keep the lid closed while frying the other side.
10. When the kebabs turn crispy or brown, remove from the pan.
11. Into the same oil, fry the remaining kebabs.
For the Sauce & Final Preparation:
Ingredients:
Fried Kebabs
Oil - 1/4th cup
Onion/Pyaz - 1 medium, sliced into thick pieces
Tomatoes/Tamatar- 5 medium, chopped
Capsicum/Shimla Mirch - 1 medium, cut into thick strips
Crushed Garlic/Lehsan- 1 tsp
Salt/Namak - 1/2 tsp
Black Pepper Powder/Kali Mirch- 1/4th tsp
Paprika/Crushed Red Chillies - 1/2 tsp
Lemon Zest/Grated Lemon Skin - 1 lemon
Procedure:
1. Add oil to the pan.
2. Add sliced onion and crushed garlic.
3. Fry for 30 sec.
4. Add chopped tomatoes.
5. Close the lid.
6. When the tomatoes get tender, add salt, black pepper powder and paprika powder. Mix well.
7. Add thick strips of capsicum.
8. Add the lemon zest. For this grate the skin of one lemon and add.
9. Mix well. Add the fried kebabs.
10. Close the lid and cook for 5 min on low flame.
11. Halabi kabas are ready. Dish out and either serve as a starter or as a part of a main course. Usually this is served with vermicelli rice.
Note: You can increase the amount of gravy/sauce with a good addition of tomatoes, onions and capsicum.
