GANITO ILUTO ANG BIBINGKA! NAPAKASARAP AT NAPAKABANGO! | ROYAL BIBINGKA WITHOUT OVEN
INGREDIENTS:
1½ cup glutinous rice flour
1/2 cup rice flour
1½ cup coconut milk
1/2 cup evaporated milk
3/4 cup sugar
3 eggs
1 cup young coconut meat
1/4 cup margarine softened
80 grams cheese (grate)
PROCEDURES:
1. Combine the dry ingredients: glutinous rice flour, rice flour, and sugar in a bowl. Mix well and set aside.
2. In a bowl, beat the eggs, pour the coconut milk and evaporated milk and then continue to beat until all the ingredients are well incorporated.
3. Add the wet mixture to the bowl with dry mixture and continue to whisk until the texture becomes soft and then add the young coconut meat, mix well.
4. In a preheated clay pot, place the heated banana leaf, arrange and form into mold then pour 1/2 cup of the mixture. Cover with charcoal and cook for 10 minutes or until firm. Note: you need to put heat(charcoal) above and below the clay pot.
5. Remove the cover, if our bibingka is almost cooked, brush with softened margarine then grate cheese. Cover and cook for 3 minutes.
6. Once done, remove from the clay pot then serve hot!
