Until it's fixed, here are the correct amounts: Makes 6 Naan Bread 1 1/2 cups bread flour, or all-purpose flour, plus more as needed 1/2 teaspoon kosher salt 2 teaspoons baking powder 1 cup plain Greek-style yogurt 4 cloves crushed garlic 1/2 cup thinly sliced green onions 2 tablespoons melted butter for brushing cooked naan

After you flipped the naan, it's good to put it straight onto the gas. It gives a better char to the bread. You can also do that with shop bought once to improve them. And raps

Little tip from making chapati/roti my whole life - use the solid block of butter on the hot flatbread soon as it hits the plate, and butter as you go. No sense pulling all of that apart, only to restack it

I make these all the time! You can make a batch of dough and leave it covered in the fridge to use throughout the week. It gets chewier each day :)

Mine turned out dry like crackers. I did use sower cream instead of Greek yogurt because there is no Greek yogurt where I come from. It was good but I was hoping it would be more soft.

@@FM_GOBi Try adding a little water with the sour cream. Bread dough consistency can vary with climate, so I go by feel. I also lean towards more soft & sticky dough. If that makes it hard to roll out, then I'll just spread it out in the pan with a little oil and a soft spatula.

I make naan this exact way (without the green onion) very often. I also use it for a quick pizza crust that's better than any frozen pizza, as I can put it on a stone!

I did this with just flour and yogurt and salt one time and it still came out great and I didn't use baking powder or rest the dough or anything, and it still came out pretty nice. I brushed garlic butter on it.

Actually you can replace the yogurt with milk mixed with a teaspoon of vinegar, it will work especially with the baking powder

I really like that you explain the reason you don't do some things, and the reason you do some things...e.g., not using too much extra flour when rolling the dough since it may lead to a 'dryer' naan.....

Nice recipe Chef John! Try kneading right in the bowl & minimize mess! Also no need for single-use plastic wrap unless you're in a construction zone! Just leave it uncovered or grab a clean towel.

Just tried it yesterday. It went pretty well, but I cooked them a bit long. Since I bought an entire quart of yogurt, I can try it three more times 😉 Did not remember to buy scallions; so, this batch was without. Also, I don't have any bread flour in the pantry, but I did what I do for bread which is to add some extra gluten. They had the right amount of chewiness when fresh, but were extra chewy this morning (the next day.)

You could sub gluten free flour, for the bread flour in this recipe! Maybe try a 1/4 or half batch - to see if you like it.

I love naan bread. Thank you so much for this! I'm going to go back and watch it again and try to impress upon my conscious memory exactly how this simple process works so I can finally do it! It amazes me to no end at my age of 66 the the absolutely essential things that other people know and do in the rest of the world to make their survival better, like making naan bread. Another example of that is really excellent rice. To me now that I've discovered it, perfect rice should never be drowned in something. you eat a bite of that perfect rice and add something else in your mouth to it it's so Good by itself so satisfying. Does anybody else feel like that or am I the only one waxing poetic about Jasmine rice? And what is your favorite rice? Question, is all naan bread no yeast?

Good rice truly is something special :) there are so many different ways to prepare it, whats`s yor favourite? I really like Basmati rice, but turkish rice is great as well. Ragearding your question: no, there are many recipes that use yeast for naan bread, they just take longer. Chef John even has his own on his site that I've used so many times because it's really good.

I am just a rank beginner Jasmine was my first foray into anything other than brown rice in forever! I've been trying so hard for the most part of my life to eat healthy rice that I've only eaten brown rice as I've been told but it's just nothing nothing in comparison with great Jasmine even Jasmine brown rice.

@@wendywhite2642 , in the spirit of “paying knowledge forward” (so no snark intended, just trying to help out a newbie, just like someone helped me), “naan” means “bread”, so it is more appropriate to just say “naan”unless you actually want to say “bread bread”. (FWIW, it is the same with “chai tea” - it literally translates to “tea tea”.) 🤓

you should make paratha. Its an Indian flat bread sizzled in oil. The best ones are stuffed with spiced potato (aloo paratha) --- they are delicious!

I made the dough plain and then brushed it with garlic oil/butter during baking them. Also very good, but I will try yours next.

I have used a very similar recipe for years. The upside is that yogurt gives a silken quality to the dough. The downside is you lose flaky layers. I use garlic power instead of fresh to make it a little less biting.

This reminds me of "the simplest flatbread recipe." Self-Rising flour + any milk product (cottage cheese, yogurt, milk, cream cheese, whatever) enough to form a dry dough. Roast in a dry pan. That's it.

When cooking, I do one side for about 10 seconds, just enough to sear and seal the side, flip untill it puff up, flip for a bit more. Then, between naans, wipe the pan out with kitchen paper else you get burnt dusting flour which sours the naan.
