I mash them up in my food processor, add lots and lots of butter (I did 70 scapes), some Italian seasoning and sea salt... keep processing until smooth. I then put it in silicone cube trays and freeze it, pop them out and store in a zip-loc in the freezer. I use this for garlic bread or in any other wonderful garlic food prep. You could do this with EVO as well. This works great with EVO for pesto cubes also!

Just a thought,the scapes arent that important,why wait till they curl,just cut em off before they slow down the bulb growth,letting them curl then cutting off in my mind would shock the plant,get rid of them quik,i dont see people talking about this technique,its always let them curl,forget the curl

Once the scapes appear, they will begin to curl as they grow out of the plant. It usually takes about one week for them to form a full circle before they begin to straighten out. You can certainly cut them off as soon as you see the scape bulb appear at the top, if you’re more focused on growing larger bulbs in the soil. Most gardeners like to let them grow into a curl just because the scapes are delicious themselves, and it provides a garlic-like ingredient prior to the main bulbs being ready for harvesting. It’s a personal preference, really.
