You guys are awesome! Love your videos. I will offer this opinion though: aircraft control is #1. If automation is taking you outside of your assigned envelope, you need to press "AP disengage", correct the error, and then re-engage. Autopilots are awesome (especially the GFC 700, right?!), but as soon as an AP begins to take you above (or below) an assigned altitude, it's time to press the AP disengage button, correct the deviation, and then re-engage.
A late altitude assignment is ATC’s problem.. not mine. You can also use pitch mode or (gasp) vertical speed mode to slow the descent rate much faster.
If they give you an unrealistic last-second level-off instruction like that, then “UNABLE” should be your response to ATC. That’s their problem, not mine. If you can still manage to pull it off, then you’re a hero. But at least you’re not accepting a clearance that you may or may not be able to adhere to, and potentially exposing yourself to a deviation or violation.
