I have a “conversion story” in the opposite direction that to me perfectly illustrates the validity of the sugar->insulin->obesity theory. Until I was in my 20s, I was very slim naturally and had no trouble maintaining that, although I had a not particularly healthy diet and I didn’t exercise much. I liked my sweets, but they were treats every so often. Then I worked in an office with a constant and overflowing abundance of chocolate. It became a daily habit to snack on chocolate all day, five days a week. And I took some home, so it continued. even on weekends! I also ate the same kind of diet I’d always had, heavy on bread, pasta, potatoes, fried foods, etc. ... and mind you I’d always been slim before ... but now with the daily addition of constant snacking on chocolate all the time, I’m sure my insulin shot up. And I began to gain weight. I think I gained 20lbs in 6mos. That weight has never come off, although I’ve touched the top end of that weight range a couple of times via carb restriction and.or calorie restriction. Fast forward 30 years. Removing refined white sugars, along with most refined carbs, is swiftly getting results. (Lost 20+ lbs in 3mos.) For the first time, I have confidence that I’ll be able to maintain this until I’m once more “slim”. Thank you, Dr Taubes (and Dr Fung!) Edited to add: Also IF, 16/8 most days, minimum of 12/12!

same here,I'm 59 now and have been on IF and keto around 2 years and I think I will continue with this because I feel great. No more alergies , no more joint pains, weight went down 10 kg ,I'm in no hurry things are looking good.

I'm glad you came "into the fold," Gary, with intermittent fasting. This is where it's really at. The next level beyond low carb. In fact, for metabolically healthy people, time restricted eating causes keto-adaptation without being "low-carb." Once keto-adaptation happens, it is enormously liberating.

73 women here lost 68 pounds decreased bp med by 3/4 s 226 to163 in nine months three years ago. only gained back 15 pounds after thyroidectomy for thyroid cancer and difficulty with a low iodine diet for radioactive iodine treatment. Back to lchf diet now with correct levothyroxin dose have lost 6 lbs and feeling good back on lchf diet.

Here's another thought-provoking question.... If lean people are so without counting calories, why should counting calories work for a fat person? Counting calories is apparently a tool for body builders who bulk then cut. It has no place in weight maintenance, or body composition improvement, for that matter.

the body building "broscience" community has taken swipes at Gary Taubes. Layne Norton. Brad Schoenfeld. Alan Aragon. They all have "bebunked Gary Taubes" (I am not keto myseylf. My macros are 50% fat, 30% carbs, 20% protein)

@@keithbarbaro7590 Layne Norton? lol He says, rightly enough, that insulin lowers blood glucose levels. But then, he doesn't say what the insulin does with the glucose it removes from the blood. He doesn't mention that insulin turns that glucose it removes from the blood into fat to store in adipose tissue. Nor does he mention the eventual development of insulin resistance leading to T2 diabetes.

25:00 Seeing what healthy people do doesn't tell you what made them healthy. This is why our fixation on Jane Fonda's workouts in the 80s never made any sense. We collectively pretended that the nonsense she did on TV was why she was thin when we all understood that her being thin was why she was the one doing nonsense on TV.

I agree. Jane Fonda looked hot and had that body from genetics and a few basic diet choices most women can make. More proof that the men with the most wealth marry the women with the best genetics and those genes get passed down. It's the main reason you don't see fat women on Manhattan's Upper East Side or Long Island's north shore but do in my working class Queens neighborhood.

Luv this guy! Blasts the bullshit... thanks, Gary! At 68 my move to what I feal is an intelligent healthy keto/intermittent fasting lifestyle is exciting...fortunately I am at a place where I had the space and discipline to give this a REAL go and WOW! More energy, clarity, drive, desire, improved physique /ability to work out... has reminded me to always strive for new insights and data impacting our paradigms... a wonderful new journey at this late phase...I'm in LUV! Challenging? Oh yea but....I LAUGH as I go down the isles in grocery stores now... I talk about it with everyone, including the checkers...feal and look so much more amazing than a year ago.... tonight's my first 36 hr real fast... nice to listen to Verta vids! Inspiring!

There's a lot of energy in water. If I put kerosene or water in my car's gas tank it does not run well. The wrong fuel in human have similar problems.

The Swiss are the healthiest in Europe. They enjoy their food, eat seasonally and they move a whole lot all their lives. That changes as imported and processed foods are squeezing out the natural food rhythms

I'm glad we've got people like Taubes and others who are either low carb or Keto. In another twenty years we'll finally see whether these people will die from heart disease or some other chronic illness. Since heart disease develops over forty to sixty years of eating and twenty has past we only have about twenty more to go before the first of the keto and low carbers should start dying. This will answer the question of whether high fat diets are healthy or not without resorting to lame studies that can prove just about anything you believe. However, I don't get where Taubes can't seem to believe that healthy people are healthy because of what they eat? The reality is that there have been at least a half dozen studies that show when people who come from countries that eat plant based, low saturated fat diets with small amounts of animal products transition from their home country to the United States and start eating higher saturated fat and more animal products in general they get just as sick as those born in this country eating in that way. And he idea that there are two types of people in this world those that get fat and those who don't. And that they are fundamentally and genetically different. So, in the matter of 70 years we went from a nation with 17% obesity to 37% obesity because our DNA changed? I don't think so. It's what we eat, or better yet what we shouldn't eat.

Meat and refined carbohydrates (sugar and flour) are easily digested. There appears to be a large group of people who love meat and love sugar and indulge in plenty of both. 20th century nutritional dogma suggests it's meat that's the problem. This, of course, is easily challenged by those who only eat meat, of which there's an increasing number. The sort of people who have the "discipline" to eat lots a vegetables, fruits, nuts, seeds, beans, pulses, etc. and avoid meat are also likely to be disciplined enough not to eat a lot of sugar. Thus we should put epidemiology in the trash heap. It is absolutely not a "pillar" of nutritional science. The medical establishment wants to keep epidemiology in the nutritional mix. It's their convenient refuge to muddy the waters and practice confirmation bias in order build bad science on top of bad science.

you are onto something. People who are into vegan or vegetarian are not drinking sugary beverages, and that alone makes a big difference. When I worked for millionaires on Manhattan's Upper East Side they ate the same foods working class stiffs like me did. The reason they were so much thinner is because rich people tend to marry taller thinner over the generations these genes are passed on. Think Don Draper!

Keith Barbaro: Vegans/vegetarians don't drink sugary beverages?! lol What did you think all those bananas and fruit smoothies are? Many vegan diets consist of practically nothing BUT liquid sugar! Freelee the Banana girl's preferred diet of about (literally) 20 bananas and papayas a day turned into smoothee drinks is notorious for making people who follow it gain weight. Freelee even adds more sugar to her banana smoothies for "richness". @Robin Lillian You're right about the smoothie trends but a lot of vegans or vegetarians avoid all the sugar and eat alot of beans, tempeh, grains!, and get fat from coconut oil.

I still don't get it. 500 calorie deficit your body needs to burn of something, hopefully fat, to get those 500 calories. Why does it matter what you ate or how much insulin you have?

Jeremy S. Because insulin is elevated by carbs the most, protein modestly and fats minimally. Insulin is a fat-storing hormone. When it’s elevated you can only store fat not burn it. You will burn your glucose in blood, then glycogen in muscles and liver. If insulin is always elevated(frequent meals, insulin resistance, type 2 diabetes, etc.) you can’t burn fat so instead you feel tired/lethargic and slow down your need for more “energy.”

@@margeebrennan906 "When it’s elevated you can only store fat not burn it." We know this is 100% false, as most people lose tons of weight while still eating carbs. If you ate 1 Twinkie 3 times a day, although very unhealthy, because calories are so low, you would lose mass amounts of weight.

Jeremy S. It’s physiology. They lose weight because they are taking in less energy than they are using and it often includes lean body mass which is why they eventually gain it back, they have significantly lowered their resting energy expenditure. Why do people with lots of extra fat ever get hungry if they have thousands upon thousands of stored energy in the form of fat? (Rhetorical ?)

​@@margeebrennan906 But you are missing the key point: If one eats tons of carbs with insulin being poured into the blood all day long, they lose weight if calories are low enough. Any diet you do, IF, vegan, carnivore, paleo, Atkins, etc., if you go off the diet you gain weight back.

@@Acujeremy No, you are missing her point, and I think you just want to argue rather than truly understanding and truly desiring to be informed. If you don't have high insulin levels, you can eat lots of carbs and not gain weight and you can even lose weight if you reduce your calories enough. People who genetically have high insulin levels find it extremely difficult, even impossible, to lose weight, and even if they do lose a small amount of weight through an extremely low calorie diet, they won't be able to maintain the weight loss as they are eventually going to get hungry and will begin consuming more calories again. Think of the biggest loser contestants, most of whom are all now fat again or even fatter than they were before. They will also develop Type 2 diabetes as they become more insulin resistant and destroy more of their beta cells by overworking them. For people who are insulin resistant, it does matter what they eat because what they eat determines whether they will feel satiated and whether they will keep their insulin levels down. You make the mistake everyone does. You extrapolate from your own experiences, thinking everyone's hormone levels are the same and work the same. Scientific studies are needed not anecdotal evidence. But I'm fairly sure nothing anyone tells you will convince you. You've already made up your mind and don't want to listen to the videos and the evidence they present.

He has a degree in physics from Harvard. What he does is expose bad science. For years it was physics based science, however many people pointed out that if he wanted to write about bad science, nutrition science was the thing to research. He took up the challenge and wrote Good Cslories, Bad Calories. It is basically a history of nutritional science and where it went wrong. Most of the science over the last 60 years has been supported by sugar, grain and edible oil. If you wanted funding you better get the results they wanted you to get.
