Caramel:
1/2 cup (100g) granulated white sugar
3 tablespoon (45ml) water
Cook: occasionally swirl and cook on medium heat until caramel color, around 7 minutes. Transfer to a heatproof beaker and pour carefully in molds up to 1/8 inch or 2-3mm in height.
Coconut Panacotta:
1/2 cup boiling water
1 package (1 tablespoon) gelatin powder
2 tablespoon (25g) granulated white sugar
1 cup milk
1/4 cup (100ml) coconut milk
Tip: if you are adding rose water, reduce the milk, do not go over your gelatin's setting power
Cook: Boil water, and place in a heatproof bowl. Add in gelatin and mix until dissolved. Then, add in sugar and mix until dissolved. Once dissolved, add milk and coconut milk and whisk to combine. Place in a beaker and carefully pour into molds with caramel. Place the pannacotta in the fridge and let it set until firm, for at least 3 hours.
Decoration:
1/2 can of Coconut Whipping Cream (or use regular whipping cream)
green+ yellow, purple, white, and pink Gel Food Coloring
