The health problems you describe are non existant. This is a german breed, not an american. In all our working breeds we look since decades to bred only with healthy individuals. This includes xray and genetic tests. Also you cannot use this breed for household/ as family pet! The G. Flushing Dog is a high prey drive, high hunting instinct driven animal. It has the english term 'Spaniel' because of his outside manner, and the ESS is similar, sure, but for this breed all it can handle is prey! You cannot train these ones for anything else! Like the (german) Jagdterrier they are hunting machines!
