I finally learned why my fried plantains never tasted like the restaurant plantains. I didn't know about dipping them in that flavorful water before the second frying. Thanks for teaching me something new.

Great work! As a Haitian, I am thankful for shining the light in Les Les Cayes, Haiti. This is just one town in the South of Haiti but there are others. The Western media want the world to believe the gangs have taken over Haiti so that they can come and still the many natural unexplored riches under the soil. Haitians use a lot of spices in cooking meat and fish. Sometimes they used the spices overnight and cook the fish next day so that the spices can sip into the meat.

We also cook our plantains just like this too in Colombia 🇨🇴 . Over here it’s called “patacón”. And it’s also very common in most Latin countries, some call it “tostones”.

Only the green plantain gets cooked in this way, by first frying then pressing flat and refrying. As it has a savoury taste. They also cook green plantain like this in Colombia, Cuba, Puerto Rico, Dominica republic, Costa Rica and Honduras. The yellow plantain (fully ripe plantain) is sweet and sliced in the way you were suggesting along with many other ways of slicing and eaten in every Caribbean island and some African countries. You can press the yellow plantain but not when it is fully ripe besides it doesn’t give the same taste as it is too sweet. Everything looked tasty 😊❤ Hats off to the chef 👩🏽‍🍳🔥

Let the plantain get very ripe so when you fry it it caramelizes in the hot oil. Very savory eaten alone or with bread.

Haitians cook it the same way regardless of it is ripe or not. We fry it twice but we do not do it the way Jamaicans, trini do it. The only thing is we do not dip in salt water as it has its own sweet flavor already

That's how we Jamaicans fried green plantains. We half fry them,take them bake out the pot then crush it and put it back in the frying pot to finish fry

I see how you’ve been having so much fun. I wish I could be there. I’m ashamed to say that I don’t know the country side and it’s very beautiful and peaceful. AT FYI!!. About The Plaintain recipe!! you said you haven't see this in other Caribbean place that you visited so I'll tell you this. That way of cooking Plaintain is done all over the Caribbean. Central and South America!. From Cuba, The Dominican Republic, Puerto Rico, U.S. Virgin Islands, Columbia, and so many more; even in Parts of JAMAICA they fry the Plaintain then flaten it in a paper bag then refry it again add seasoning. You still have not experienced the whole Plaintain thing just keep traveling. You will soon know how the thing go.😅😅😂😂❤

That's my favorite way of having plantains, a lot of people prefer them ripe but I like the green ones pressed and refried, that crispy crunchy is my thing. Don't get me wrong I like the ripe ones too.

Our ancestors did come from a few places in Africa Sister! I myself am Congolese - Nigerian mostly, then there's some Ghanaian, Liberian, Sene-Gambian, San & some more! My mother is pretty much the same, with a little Taino! I wouldn't change it for the world! ❤

I know Trinidad and Jamaica dies pressed plantain also, using the green plantain, it's not as popular as the ripe fried plantain. Food looks good

The plantain pazê, us Puertorrican we called Tostones, dominicans people the called Fritos, and Venezuelans or Cubans they called Patacones. Same product, same process, same results. BUT Diferrents names. 😂😂😂😂.

I always dip my plaintains in salt walter but never thought to add some maggi cubes and lime to it. I never grew up on doing that but I want to try it. Sorry African Tigress, we do not cut our plaintains in those small chips sizes as it does not get fully cooked or flavorful when you do it. Haitians cook plaintains the best and let's keep it the way it should be. We don't play when it comes to plaintains lol

Those jumbo bananas at 12:15 are called burro bananas in US and Latin countries. According to Dr. Sebi, the burro banana is the original banana and much healthier than the regular banana. They do have seeds. They are a good substitute for plantains, potatoes & cassava. I use them to make mashed potatoes, fries, fufu, gnocchi, masa for pasteles (Latin dish), most vegans eat this veggie for its alkaline and electric benefits in the US. Thanks for sharing your experience in Ayiti.

Wait for the plantain to ripen. Peel, slice and fry. Ripe plantain (when skin is near blackened) caramelizes nicely in the hot oil. Very sweet and savory eaten with bread or on its own. Green fig is different. Boil, mash and season the green fig. Or boil it whole in a well seasoned beef or fish soup. Real nice AT and friend.

I hope lens takes you to ile a vache. I cannot stress this enough lol. Lens please do your big one. Also, besides jacmel you can't leave haiti without going to petion ville. Tbh it's still the most beautiful part of haiti. The houses, the restaurants and the Mountains ugh beautiful. Just avoid downtown Port au prince 😂😂😂 but if you find a host family they'll take care of you. Proud of what you're doing AT. ❤❤❤❤❤

African Tigress, Please note that the plantains are not only done that way in Haiti. If the plantain is very green, they come out like chips. It is also called tostones in Puerto Rico. Some of the other Caribbean islands and Latin American countries prepare them that way too. I live in Toronto and I make fried green plantains sometimes. Of course, we boil the ripe plantains and fry them when they are very ripe.
