Depends. Some instructors maintain the same order and lead and drop back through the pack eg start behind lead and then drop to third etc. The route is usually a loop or ride to an area with a loop eg a suburb with a large loop road. You then do that loop as many times as takes for the instructor to observe each rider. Normally with a stop point for a debrief before each change of position. They will generally ask where people are from and get the lead to be the most local person. They expect riders to be fine with gear shifting, clutch control, indicating etc and the main focus is on awareness, setting up to break, road positioning to prepare for threats.
