Hi Kshar, I cooked the ghorme sabzi yesterday and as you recommended I left it overnight. This is my husband's FAVORITE dish... his mother is an amazing cook and she used to always make it for us cause it's her son's favorite dish. I was so reluctant to make it cause I didn't want to screw it up. I watched the video and had the courage to finally make it and my GOD!!!!! My husband had this HUGE smile on his face and said that this is as good as his mom's. This is a huge deal and I want to thank you. I added a lot extra dried lemon and crushed lemon cause my husband loves it that way. Thank you dear Kshar :)

A couple of hints I would like to stress. The dried limes, and Fenugreek are essential to making this authentic tasting, both are strongly aromatic (part of what makes your house smell for days), and the dried limes impart a very different flavor that you can not mimic with fresh lime juice - so don't leave them out if you can avoid it. The fenugreek can be commonly found at indian spice shops/grocers under the name kasoori Methi, the dried limes (limu omani) however are a little tougher to find locally depending on where you live, so they may need to be ordered online. Also really listen to what Kshar is saying about the onions. It is not only for the looks, but the flavor as well, don't skimp here either. These three things in addition to cooking time (3hrs minimum) are the heart and soul of making this dish correctly. In addition to spinach I usually add cilantro as well, but its not essential.

Hi Kshar! Thanks once again! I made ghorme sabzi for the first time and it was good. Well, the stew was really good. I didn't have fenugreek leaves so I put some feenugreek seed. So it wasn't perfect but still good. Also the meat wasn't soft...Is it because I added salt when I was frying the meat with the Onions? Also I love addas polo keshmesh with minced meat (without tomato paste)...Could you please teach us how its made? LOVE your recipes, never felt like cooking till I saw your videos

OK. I made this today. And, I have to say, both my husband and I enjoyed it tremendously. I had heard and read about Ghormeh Sabzi many times before but, somehow, the look of it just didn't appeal to me and so I kept putting off making it. But I also kept hearing how this is one of the favorite foods of Persia, so my curiosity finally got the best of me today, plus I had all the ingredients. So, I took the plunge and made it. And so glad I did too. This is an incredibly delicious stew. Very unusual to my taste buds, very tasty! I especially enjoyed biting down on the lime pieces now and again. Wonderful! My husband already wants me to make this again and again. But then, he felt the same way about the Zereshk Polo I made two weeks ago. :) Thank you for sharing this, KShar. My half sisters Parrisa and Sheeryn are persian, and usually on thanksgiving I spend it with them and my step dad Hedayat will make kabobs and ghormeh sabzi and some kind of eggplant stew, but I moved out of state so this year I'm going to have to try and make it myself. dear i live here in Melbourne but i haven't tried this recipe but it looks delicious and what really make me sure a good recipe of gormeh sabzi is your way of frying the herbs first ..it's a personal experience of mine frying herb like this but with different dish.

I LOVE ghormet sabzi. I'm such a fan, but my husband is American and I had to alter it a bit. I use Onion, Spinach, Kidney beans, the meat, and also to add texture some mushrooms. Also, we use lemon juice. But I agree, it tastes MUCH better after sitting for a day!

@@vjam9428 Hey V, I tried it out and this video in fact does have subtitles. Just click "cc" under the video and you will see the subtitles. It is probably RU-vid AI doing the transcribing, which is an amazing assistive technology. I think the gentleman in this video was very nice and didn't particularly exclude you or anybody. Most people just do the best they can and are not equipped to provide accommodations for everyone out there with particular special needs. Prior to wathcing this video, I watched a woman making khoresht sabzi while speaking Persian. I knew a few words here and there, but I could not understand anything she was saying. I could have complained in the comments that she should remember that there are people out there who need an English translation (I guess RU-vid doesn't have that technology yet) but I didn't think it would have been constructive. I would imagine this kindly-looking person does not personally know how to add his own subtitles. Nevertheless, if you wanted to make your point anyway, which you obviously did, perhaps you could have written something less accusatory and more constructive. For example, you could have said, "Hi, I'd love to try this recipe but I couldn't understand the instructions because I'm deaf. I would greatly appreciate it if you could add subtitles. TIA."

Hi there..I just had sabzi for the first time last night and I loved it!! Thank you for making this for us. Have you ever made it vegetarian style and just left out the meat or is it not as good. Salaam, I am trying to learn to cook persian food and your videos have really helped me, but I am confused with ingredients and amounts needed for this recipie - please could you perhaps write a list for me so i know exactly how much to use of everything? Thankyou!
@shelysheli1 it takes few hours, depending on the kind of meat you use, lamb takes longer than beef. if your meat are big pieces will take longer of course. this dish needs to cook for 3 to 4 hours on med. and covered. I normally cook it a day ahead of time. good luck
This is so similar to the Ghormeh Sabzi recipe I learned. I would make the comment that the dried limes (in the stew) and dried sumac (with the yogurt) are not optional for those unused to these recipes. The flavor is impossible to duplicate, really...(similar to why there is no substitute for kaffir lime leaves or galangal in curries...there is an aged, sour / woody flavor missing otherwise). Personally, I like this best with fresh fenugreek, but it's so hard to find...also, check out carrot and celery leaves for this! "If it's not mud, it's not done."
